Ambrosia type recipe request

Does anyone have a favorite ambrosia or jello/cool whip type salad they can share?  I'm looking for something to have with Easter dinner. Thought I would ask here before searching the web.  Thank you!

Here's my favorite fruit salad.

 

Easy Fruit Salad

1 8 oz pkg Cream Cheese
2 Tbsp powdered sugar

2 sm (14oz) cans Fruit Cocktail in heavy syrup
(drain, keep juice)
1 small flat can Pineapple Tidbits
Maraschino Cherries

Coconut
Nuts

 

Let cream cheese warm up and soften. 

Put in bowl.  Add 2 Tablespoons powdered sugar and enough Cherry Juice (from jar) and Fruit cocktail syrup to make a lovely pink “dressing” soft enough to mix well.

Add:

Fruit cocktail (drained)
1 small can pineapple tidbits
2 T cherries (I cut in half)

Mix well with Cream cheese “dressing.”

I add a small amount of Coconut and Nuts.  Stir in.

Pistachio Pudding Salad

 

1 16 oz can crushed pineapple, drained

1 package instant pistachio pudding mix

1 small can mandarin oranges, drained

1 cup chopped walnuts

2 chopped apples

8 oz Cool Whip

 

Add pineapple to dry pudding, mix in remaining ingredients, refrigerate.

This is my ambrosia recipe, but picture is from Insanely Good Recipe siteI usually make the night before.

Ingredients

1 8 oz cream cheese

1 16 oz sour cream

2 cans 10.5 - 12 oz (small) mandarin oranges, drain, but save juice

1 20 oz can chunk pineapple (small or large chunks), drained

1/2 of 10 oz bag of mini marshmallows

1 7 oz bag of shredded/flaked coconut

2 oz (optional) Grand Marnier Cordon Rouge (orange) Liqueur

 

Instructions

Toast the coconut on sheet pan until golden brown. Let cool

 

Cream the sour cream and cream cheese w/ 2 oz of Grand Marnier or the juice from the mandarin oranges. (Add additional mandarin orange juice to get to desired consistency after you've added the items below).

 

Fold in the drained pineapple, mandarin oranges, marshmallow and 3/4 of the coconut to the sour cream and cream cheese.

 

Put ambrosia in your serving dish and top w/ the remaining toasted coconut.

 

This salad can be made the day before (it's yummy). 3-5 day shelf life when refrigerated.

@kate2357 I like the addition of marshmallows,  my husband likes marshmallows in recipes.

Other than in hot chocolate ... this is pretty much the only way I eat marshmallows. I like the taste, it's the texture that does me in.
