Alternative crust for Key Lime/ Lemon/ Coconut type of pies.

I just found this recipe and used it to make a key lime pie and it was so delicious.

Coconut Shortbread Crust.

7 1/2 oz of Lorna Doone cookies or Scottish shortbread. ( I used LD and it was 1 1/2 sleeves)

1 1/4 cups of coconut

1/2 stick of butter, melted.

Put the cookies in processor and wiz til crumbs and add to melted butter in a bowl.

Wiz coconut in processor til small pieces and add to bowl with crumbs and butter.

Mix well til evenly coated and press into pie or tart pan.

Bake at 350 for 16 minutes.
