All-American Macaroni Salad - QVC David Venable

This salad sounds so good to make in this hot weather.

All-American Macaroni Salad - QVC David Venable

Salad:

4 cups elbow macaroni, cooked, drained, and chilled
1 cup red onion, chopped
1 cup celery, chopped
1 cup frozen peas, defrosted
1/2 cup red peppers, chopped
1 cup carrots, grated
3 eggs hardboiled and chopped
1/2 lb thinly sliced deli ham, diced-

Dressing:
1-1/2 cup mayonnaise
3/4 cup sour cream
2 Tbsp Dijon mustard
3 Tbsp white vinegar
1/2 tsp garlic powder
1 tsp ground black pepper
2 tsp kosher salt
1 Tbsp sugar
1 tsp celery seed

Combine the elbows, onion, celery, peas, red peppers, carrots, eggs, and ham in a large

mixing bowl. Then, in a separate bowl, combine the mayonnaise, sour cream, Dijon

mustard, vinegar, garlic powder, black pepper, salt, sugar, and celery seed. Mix until

fully combined and pour the dressing over the salad ingredients. Fold until evenly

coated. Chill and serve.

How many does this feed?  I'm thinking for the event I'm going to before long, I need to know how much to make.  For 3 doz. women?  This sounded good and I wanted something with some meat in it and this sounds good.

Lose the peas and the dressing just use Kraft MIracle whip

@qualitygal, I was curious so I looked up DV's recipe and surprisingly it doesn't indicate how many servings. Although women usually take smaller portions, I'd probably double the recipe like others have said just to make sure. If there is a lot of food at your event, the original recipe might be enough, but it's probably better to have more than not enough! BTW, the photo of the salad looked terrific. Let us know how it tastes!

OK, do I start with 4 cups DRY macaroni andthen cook drain and chill, or do I measure 4 cups macaroni AFTER cooking, then chill?

I cut the recipe in half. I used 2 cups of dry macaroni. I substituted Miracle Whip for the mayonnaise and sour cream. My husband and I thought it was delicious. However, I think I will have to halve it again. It makes way too much for 2 people.
