Like the Argentinian Chimichurri Sauce, which is basically parsley, the Peruvian Aji sauce, based on cilantro, is used on meats, fish, and even eaten on a roll. People seem quite absolute about their like/dislike of cilantro, so this obviously is for cilantro fans only. It's so good.
Aji Peruvian Hot Sauce
2 bunches cilantro, stems removed
1/2 cup olive oil
3 jalapenos, quartered
1/2 teaspoon salt
water, as needed
In a blender add the cilantro, oil, jalapenos and salt. Pulse, adding water as needed until it’s well blended but not runny.
