These are a delicious version of homemade jalapeno poppers. These can be finished off in your air fryer - which is how my DIL makes them. My DIL turned me on to the Sweet C's Design website. Lots of great recipes.
I helped my DIL make these. She followed this recipe pretty closely. She did her own bacon bits and added red pepper flakes because we all like a bit of heat. She used Cojack cheese with me, but said she had also used pepperjack cheese and hot sauce instead of red pepper flakes. That sounds good too.
We had to make this in two batches because you want to cook these in one layer at a time. (I have not tried these in the oven - but if I did, I would probably cook on a rack so air goes around the pepper).
Air Fryer Jalapeno Poppers - Sweet Cs Design
INGREDIENTS
15 fresh jalapenos
8 oz cream cheese
¾ cup Colby Jack cheese (shredded works best)
1 tsp garlic salt
1 tsp onion powder
½ cup panko breadcrumbs
¼ cup bacon bits
1 tsp red pepper flakes* (optional or add a bit of your favorite hot sauce)
INSTRUCTIONS
Cut each jalapeno in half lengthwise and use a spoon to scrape out the insides of each half so they are hollow. Set the prepped jalapenos aside.
In a medium sized mixing bowl, stir together the cream cheese, Colby Jack cheese, and half of the bacon until the cheese and bacon is evenly distributed throughout the cream cheese.
Using a spoon or spatula, fill each jalapeno half with the cream cheese filling.
In a small bowl, stir together the breadcrumbs and remaining bacon. Dip the top cream cheese side of each popper into the breadcrumbs to fully coat the cream cheese.
Preheat the air fryer for 5 minutes at 390 degrees Fahrenheit. Once the air fryer has preheated, cook the jalapeno poppers 5-6 at a time for 5 minutes.

Have to say, after a few quality control samples, it was hard to not eat the entire batch. My dil says she has to triple the recipe when my two sons, their dad and a few cousins come over to watch a sporting event at her house.
I never feel guilty eating this kind of snack food.

I love poppers with a berry dipping sauce ( think Arby's got me started on that combo when they sold them). It was a raspberry jam that had a vinegary mustard added to it i think.

Most of the recipes I use are fairly healthy or you can at least make a healthier version.
We eat mostly fresh foods and not a lot of packaged/prepared foods because that's what my husband grew up eating. It works for us and luckily I do like to cook.
Which is not to say we don't eat some packaged foods. Heaven forbid we didn't have pizza night or tater tots once in awhile.
