After prepping, I either nuke it or bake it.  Instead of seasoning, I pour in some pancake syrup (Mrs Buttersworth's) and a dab of butter,  Yummy in my tummy!

Love all the ideas! I made them for lunch with olive oil and S&P. Baked for an hour at 350. Was sooooo good. Next time I will try the syrup, or brown sugar. Thanks, Ladies.

@nanny24 I make mine with apples, pear, raisins, brown sugar, orange zest, cinnamon and nutmeg. I bake @ 325, cut side down, with a little water in the pan. Bake for 45 minutes. As another poster said, a shortcut but great is with butter, maple syrup and touch of ginger.

I'm with @Kachina624 and @kitcat51 - slice in half, remove seeds, put in pyrex dish cut side down with a little water and cook in microwave for about 8 to 10 minutes until soft. Flip over and add about 2 tablespoons butter and 2 tablespoons brown sugar. Microwave for another minute or so. Delicious!

We eat butternut and acorn squash often and bake it cut side down until the end and add butter and brown sugar.

 

We also make a baked casserole using cubed squash, broccoli, Italian stewed tomatoes (canned) and chicken breast.  We have used pork instead of chicken and I'll bet ground beef would be good too.

 

@Coquille  Your idea of apple, pear, raisin really appeals to me.  How do you prepare?  Boy, this is making me hungry!

@KathyM23. Butter a baking dish or an edged cookie sheet. Preheat oven 325. Place 2, halved  Acorn Squashes cut side down, on dish or pan. Add 1/4 inch of water. Bake 45 minutes. Meanwhile, in a medium bowl mix 2 large apples diced, 1 ripe pear, diced, 1/4 cup dried raisins, 2 tbsp brown sugar, grated zest of 1 small orange, 1/4 tsp cinnamon, a touch of nutmeg and lately I've been adding 1 cup chopped pistachio nuts (optional).

Heat in a large sauté pan on medium heat, 2 tbsp of butter, til melted. Add apple mixture and cook until the fruit is golden, about 5 minutes. Stir in about 1/4 cup of orange juice (sometimes I use apple cider vinegar instead because I don't always have orange juice in the house), years ago I would put in a tbsp of rum ( just as good without). Simmer, stirring often, until fruit is tender. about 8 minutes. When squash is done, fill the squash with the mixture. Bake til tender, about 15 minutes more.

Enjoy!

@Coquille  Thank you so much.  I am definitely going to try my squash this way.  Sounds delicious.  Adding the orange juice really sounds good.  We add orange juice to cooked carrots and cooked beets - really adds a good flavor.
