AUTUMN SALAD

 

1-10 oz bag spring mix with baby spinach
1 Honeycrisp apple thinly sliced
1/2 cup dried cranberries
1/2 cup crumbled blue cheese
1/2 cup whole pecans, toasted
1 cup roasted cubed garnet yams (one average size)

 

Dressing:

1/4 cup apple cider vinegar
3/4 cup olive oil
2 T maple syrup
1 T Dijon mustard
1 T fresh lemon juice
1/2 t salt
1/4 t pepper

 

Preheat oven to 400.  Peel and cube garnet yam and toss with 1 T olive oil.  Spread on bake sheet and bake until soft (20-25 minutes).  Chill for at least 30 minutes.

 

Combine dressing ingredients in a small bowl or jar.

 

In a large bowl toss all ingredients except dressing.  Dress salad just before serving.

 

You will not need all the dressing.  I got this from a food blog that I currently cannot remember the name of?  I added extra toasted pecans to sprinkle on top.  It makes a colorful pretty salad.

@DiAnne--OMGosh-----this sounds so good and I can see what a beautiful salad it must be just from the ingredients!!!  Someone needs to post a pic of it !!!! I will be saving this recipe myself.
