QUESO Meatballs

 

1 1/2 lbs. frozen meatballs

2 tablespoons vegetable oil

1 (1 lb.) package Velveeta cheese, cubed

1 (4 oz) can chopped green chiles

1 envelope taco seasoning mix

1/2 cup water

 

Put frozen meatballs in large skillet or pot, and cook, covered, on medium heat 10-15 minutes until heated.  Remove to bowl and wipe skillet clean.  Add oil, cheese, chiles, taco seasoning mix and water.  Over low heat, stir until melted.  Add meatballs; simmer; cover, stirring occasionally, until all is heated.  Keep warm in crockpot or chafing dish.

New Orleans-Style Red Beans

 Ingredients

  • 1 Tbsp vegetable oil
  • 1 small onion, finely chopped (about 1 cup)
  • 2 celery stalks, peeled and finely chopped
  • ½ bell pepper, cored, seeded, and chopped
  • 3 garlic cloves, minced
  • 1 pound dried red kidney beans, soaked overnight in cold water
  • 10 cups water
  • 1 ham bone end, ham hock.  2 to 3 slices of bacon will work, too
  • 2 tsp Tabasco sauce, plus more for serving
  • 2 tsp coarse salt
  • 1 tsp dried thyme
  • 1 bay leaf, crushed
  •  
  • Halved, grilled seared sausage (optional)
  • Hot sauce, for serving

Directions

  1. Heat a large pot. Add the oil. Add the onion, celery, bell pepper, and garlic and saute until soft and lightly caramelized, 11 to 12 minutes.
  2. Drain and discard the soaking liquid from the beans and add the beans to the pot. Pour in the fresh water and stir. Bring to a boil, reduce the heat, and simmer uncovered for 1 hour. Skim off any foam as it rises to the surface.
  3. Add the ham bone, Tabasco sauce, salt, thyme, and bay leaf.
  4. Continue to cook until the beans are soft and tender, 30 to 60 minutes more. (The time will vary depending on the age of the beans, so taste frequently.)
  5. Using the back of a spoon or spatula, crush some of the beans against the side of the pan to create a slightly creamy consistency. (optional)

Scotch Eggs

from Good Housekeeping

 

  • 3 oz. roughly torn baguette (about 2 cups)
  • 6 large eggs, divided
  • 1 lb. ground beef
  • 3 cloves garlic, pressed
  • 1 tbsp. finely grated lemon zest
  • Kosher salt and pepper

  • 1/2 c. all-purpose flour 

 

Step 1

Heat oven to 425°F. Place torn baguette on baking sheet and bake until dry, about 6 minutes. In food processor, pulse baguette to form small crumbs; transfer to a bowl.

Step 2

Meanwhile, bring a small pot of water to a boil. Carefully add 4 eggs and cook 6 minutes; cool in cold water, then peel and set aside.

Step 3

In medium bowl, combine beef, garlic, lemon zest, 1 raw egg and 1/2 teaspoon each salt and pepper. Create a flat disk with one-fourth of beef mixture and place 1 soft-boiled egg in center. Gently wrap beef around egg. Repeat with remaining beef and soft-boiled eggs.

Step 4

In a shallow bowl, combine flour and 1/2 teaspoon salt. In a second bowl, beat remaining raw egg with 1 tsp water. Add breadcrumbs to a third bowl. Heat 4 inches canola oil in a medium pot to 350°F. Coat wrapped eggs in flour, then egg mixture, then breadcrumbs. Fry eggs in 2 batches until golden brown, turning as necessary, 4 to 5 minutes each. Serve with salad if desired.

 

This recipe reminds me of my mom's meatloaf - she used to put two hard boiled eggs in the center.

Turkey Burger

 

1 egg beaten

1 teaspoon worchestershire sauce

1 tablespoon dijon mustard and ketchup

1/2 teaspoon each onion power and garlic powder

1/4 teaspoon each salt and pepper

1-1/4 pounds 85/15 ground turkey

1/3 cup panko crumbs

 

combine egg through pepper in large bowl.  add turkey and mix.  sprinkle with panko and stir to combine.  divide into six patties 1/4 inch thick.  grill to 165 degrees.

Upside Down Pizza

  • lb lean (at least 80%) ground beef
  • jar (25.5 oz) tomato basil pasta sauce
  • teaspoon dried oregano
  • cup mini pepperoni slices (4 oz)
  • can (2 1/4 oz) sliced ripe olives, drained (1/2 cup)
  • cups shredded mozzarella cheese (8 oz)
  • 1 can (8 oz) Pillsbury crescent rolls
  • tablespoon olive oil
  • teaspoon Italian seasoning
1. Heat oven to 375°F. Spray a 13x9-inch (3-quart) baking dish with cooking spray.
2. In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until beef is brown; drain. Add the pasta sauce and oregano and bring to a boil. Reduce heat to medium-low and simmer, uncovered, for 5 minutes. Add pepperoni slices and olives. Cook for 1 to 2 minutes, until hot. Stir in cheese. Spoon into baking dish.
3. Unroll dough; press to form 13x9-inch rectangle. Place on beef mixture; cut 4 to 5 vent holes in dough. Brush dough with olive oil. Sprinkle the top with Italian seasoning.
4. Bake 20 to 25 minutes or until crust is a deep golden brown.

Chocolate-Raisin-Oatmeal Cookies*

 

3/4 cup butter, softened

1/2 cup granulated sugar

1 cup brown sugar

1/4 cup milk

1 large egg

1teaspoon VANILLA

1 cup flour

1 teaspoon cinnamon

1/2 teaspoon baking soda

1/4 teaspoon salt 

3 cups oatmeal

1 cup chocolate-chips

1 cup raisins

1 cup chopped walnuts, optional

 

Beat butter, sugars, milk, egg and VANILLA until light and fluffy.  Add flour, cinnamon, baking soda and salt.  Then mix in oatmeal, chocolate-chips, raisins and nuts.  Place rounded scoop full of dough on ungreased cookie sheet.  Bake 12-15 minutes at 350.

 

* Found on Sunmaid Raisin container....very good...nice variation from regular chocolate-chip cookies.

I do not understand why my recipe for Papaya Fruit Salad was deleted.

 

There were no visible links that I saw.    

 

It contained Pineapple, Mango, Avocado and Papaya chunks.  Squeeze lime juice over all.

 

I would add Ripe Papaya to any fruit salad.  They are delicious!
