Well I don't know about you but July just passed me by in a blink!  We have reached that time of year where summer will start to wind down but there is still plenty of outdoor eating weather to come so let's share our best family recipes!

 

.HOW TO PLAY.......
 
The first player of the month starts the game by posting their choice of recipe.  At the end of the text, she or he types, "the next ingredient: xxx."
(The x's represent that person's choice of any ingredient that can be included in a recipe).  

Throughout the game, the next poster in line must use the ingredient that the person ahead chose.  If you can, highlight the ingredient and/or put it in capital letters anywhere that it is used throughout the recipe.  That does make it easier for everyone to see how the game works.
 
Because of time or system delays, some duplicate posts occur to the same ingredient.  The next poster generally responds to the first post for the next ingredient.  Good recipes and lots of fun!!
 
Normally, we start out with a recipe so I will post the last one shared on the July thread and we can take it from there if that's ok with every body (thanks again to our friend @walker!):
 

Carrot Cabbage Slaw

 

4 cups shredded cabbage

2 cups shredded carrots

2 medium Golden Delicious apples, chopped

1 cup raisins

1/2 cup chopped walnuts

1/2 cup honey

1 tablespoon lemon juice

1 cup SOUR CREAM

1/4 teaspoon salt

1/8 teaspoon pepper

1/8 to 1/4 teaspoon ground nutmeg, optional

 

Combine cabbage, carrots, apples, raisins and walnuts;  set aside.  Mix together honey and lemon juice until smooth.  Stir in the SOUR CREAM, salt, pepper and nutmeg, if desired.  Pour over the cabbage mixture and combine well.  Refrigerate until serving.

Baked Eggs with Spinach and Tomato

Yield: 4  Only 207 calories   from countryliving.com

Ingredients

  • 2 tbsp. olive oil
  • 1 medium onion
  • 5 oz. fresh baby spinach
  • 1 can whole tomatoes
  • 1 tsp. ground cumin
  • 1 tsp. salt
  • 1 tsp. Freshly ground pepper
  • ½ tsp. sweet paprika
  • 2 tsp. Hot sauce
  • 4 large eggs
  • ¼ c. Crumbled feta

Directions

  1. Preheat oven to 400 degrees F. Meanwhile, in a medium saucepan, heat oil over medium-high heat. Add onion and sauté until soft, about 5 minutes. Add spinach and sauté until just wilted, about 2 minutes. Remove from heat.
  2. In a medium bowl, stir together tomatoes, cumin, salt, pepper, paprika, and, if desired, hot sauce. Add onion-spinach mixture and stir to combine. Divide among 4 oiled 10-ounce ramekins.
  3. Crack an egg into the center of each ramekin, then sprinkle on feta. Bake until whites are set but yolks remain soft, 12 to 15 minutes.

Instant Pot Beef Stew

  • 1 1/2 pounds beef for stew, cut into 1-inch pieces
  • 1/4cup all-purpose flour
  • tablespoons olive oil
  • pound small new potatoes or small red potatoes
  • cups baby cut carrots
  • 2 medium onion, cut into wedges
  • cloves garlic, minced
  • 2 1/4 cups beef broth or beef stock
  • tablespoons tomato paste
  • tablespoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • bay leaf
  • cup frozen peas, thawed
Step 1

Season the beef as desired.  Coat the beef with 2 tablespoonsflour.  On your Instant Pot®, select the Saute setting.  Heat the oil in the Instant Pot®.  Add the beef in batches and cook until well browned, stirring occasionally.  Press Cancel.

Step 2

Stir in the potatoes, carrots, onions, garlic, 2 cups broth, tomato paste, Worcestershire, thyme and bay leaf.  Lock the lid and close the pressure release valve.  Select the Pressure Cook or Manual setting according to which model of Instant Pot® you're using. (If using Manual setting, select High pressure.)  Set the timer to 18 minutes (timer will begin counting down once pressure is reached).  When done, press Cancel and use the quick release method to release the pressure.

Step 3

Stir the remaining broth and remaining flour in a small cup until smooth.  Select the Saute setting.  Stir the flour mixture and the peas into the Instant Pot.  Cook, uncovered, for 1 minute or until the mixture boils and thickens.  Season to taste.

Tomato Bruchetta

1 loaf French bread

Garlic cloves or minced garlic

1 1/2 cups finely chopped tomatoes (about 1 1/2 pounds, seeded)

1/4 cup chopped Kalamata olives

1/4 cup chopped onion

2 teaspoons olive oil

1 teaspoon balsamic vinegar 

5-6 fresh basil leaves, chopped or 1 teaspoon dried basil leaves

 

Directions

Preheat oven 450°F. Slice French bread into thin slices and bake about 10 minutes or until crispy. Remove from oven and rub garlic clove across top.

In bowl, combine all remaining ingredients. When ready to serve, top toasted bread.

This recipe found in Chef Tony Notaro's new cookbook....Easy Recipes you'll LOVE.  Very juicy and good grilled inside or out!

 

REALLY JUICY CHEESEBURGERS

 

2 lbs. ground chuck

4 ozs. cheddar cheese, diced

1/4 cup real bacon bits

2 teaspoons Worcestershire sauce

2 tablespoons ketchup

1 teaspoon (yellow) MUSTARD

2 tablespoons water

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

6 hamburger buns, split

 

In large bowl, combine all ingredients except buns; mix just until combined, then shape mixture into 6 equal-sized patties.  Make an indentation in the center of each burger with your thumb. (Chef Tony's tip...prevents burgers from puffing up while it cooks.).   If you don't need all 6 patties, wrap them up and freeze them.

 

Heat a large skillet or grill pan over medium-high heat and cook 4 to 5 minutes per side until desired doneness. (Instant read thermometer should be 145 degrees for medium-rare, or to desired doneness.).   Place patties on buns and serve.

Delicious, soft and chewy cream cheese cookies with fresh strawberries and white chocolate chunks.


Ingredients
  • 1 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/4 cup unsalted butter-softened
  • 4 oz cream cheese-softened
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoons vanilla extract
  • 3/4 cup chopped fresh strawberries
  • 2 tablespoon lemon juice
  • 1-2 tablespoon flour
  • 5 oz white chocolate-chopped
  • sanding sugar

 
  1. Preheat the oven to 350 F and line pans with parchment paper.
  2. Pour fresh lemon juice over chopped strawberries, drain them after a few minutes.
  3. Whisk together 1 1/4 cup all-purpose flour, salt and baking powder and set aside.
  4. Beat butter with sugar and cream cheese until it’s light and fluffy.
  5. Add egg and vanilla and mix well.
  6. Gradually add flour mixture and mix until it’s well combined.
  7. Stir in chopped white chocolate.
  8. Sprinkle strawberries with 1-2 tablespoon flour, toss them until all strawberries are coated with thin layer of flour and then stir them really gently in the batter.
  9. Drop heaping tablespoon of batter onto pan leaving an inch space between.
  10. Set the cookies in the refrigerator for 5-10 minutes before baking.
  11. Sprinkle the cookies with sanding sugar if you want, but do not overdo it because they are sweet enough.
  12. Bake for 13-15 minutes( until the edges become golden brown).
  13. Let them cool a few minutes in the pan than transfer them to a wire racks to cool completely.

This salad can easily be a meal.  Add crusty bread!

 

Columbia Restaurant 1905 salad


Salad Ingredients

½ head iceberg lettuce, shredded amall
2 ripe tomatoes, cut in eighths
½ cup Swiss cheese, cut in julienne strips
½ cup ham, cut in julienne strips (or turkey or shrimp)
¼ cup green Spanish olives, pitted
2 teaspoons grated Romano cheese

Salad Dressing Ingredients

1/8 cup white wine vinegar
½ cup extra-virgin Spanish olive oil
4 garlic cloves, minced
1 teaspoon Worcestershire sauce
Salt and pepper to taste
1 teaspoon oregano
2 teaspoons lemon juice

Preparation

Toss together all salad ingredients in a bowl, except

Romano Cheese.

Mix garlic, oregano, and Worcestershire sauce in a

bowl. Beat until smooth with a wire whisk. Add olive

oil, gradually beating to form an emulsion. Stir in

vinegar and lemon juice and season with salt and

pepper.

Add dressing to salad and toss well. Add Romano

Cheese and toss one more time. Serves 4.
