ARUGULA, GOAT CHEESE AND POMEGRANATE SALAD

I am frequently making this salad lately.  The basics came from The Oz Family Kitchen cookbook but I have made a few minor changes.

 

Dressing
1 T balsamic vinegar
1 T fresh lemon juice
1 t pomegranate molasses
1/2 t honey
1 small garlic clove, pressed
2 T extra virgin olive oil
Salt and pepper to taste

 

Salad
5 oz baby arugula (6 lightly packed cups)
1/2 cup candied walnuts
1/3 cup pomegranate arils
3/4 cup crumbled goat cheese (3 ounces)

 

Whisk the vinegar, lemon juice, pomegranate molasses, honey and garlic together in a small bowl.  Gradually whisk in the oil.  Season to taste with salt and pepper.

 

Toss the arugula, walnuts and pomegranate arils together in a large bowl.  Add the dressing and toss again.  Sprinkle with goat cheese and serve.

This sounds really good. I have a similar recipe that has orange slices and prosciutto. I will have to look for the pomegranate molasses. Thanks!!!
