Greetings Recipe Game friends and welcome to April and that's no foolin' (and unfortunately that is also the best I could come up with this morning, I know boooo!) . . . Smiley WinkSmiley Very Happy

 

It's my understanding that Easter will be coming this month (my goodness it just seems so late this year!) so I look forward to any and all recipes to celebrate with our family and friends.  Many thanks as always to our very good friend @walker  who was kind enough to start us off with not just one but two delicious recipes (and that turkey one may end up being my Easter meal, thank you my friend!):

 

Breaded Turkey Breasts

 

1 cup dry BREAD CRUMBS

1/4 cup grated Parmesan cheese

2 teaspoons Italian Seasoning

3/4 cup milk

8 turkey cutlets (approx 2 oz each)

1/4 cup olive oil

 

 

Combine BREAD CRUMBS, Parmesan cheese and Italian seasoning.  Pour milk into shallow dish.  Dip Turkey cutlets in milk and then roll in crumb mixture.

 

Heat olive oil over medium heat and cook cutlets for 4-5 minutes on each side or until juices run clear.   Drain on paper towels.  


Chicken Pronto

 

4 boneless chicken breasts

Italian Salad Dressing

BREAD CRUMBS...w/Italian Seasonings

 

Dip chicken in Italian Dressing...then in BREAD CRUMBS. Place in a 9x13" baking dish. Cover and bake at 350 for 30 minutes....Uncover and bake another 30 minutes.

I have posted this before, I think.  It is from an episode of  Diners, Drive-ins and Dives which was filmed in Amherst, NY

 

I watched the video many times to be able to write it all down.

 

Then went to the Diner and had it!  Excellent!

 

Real cheeseburger soups shouldn't have veggies since a cheeseburger doesn't usually have carrots, potatoes and celery on top!  LOL  So many versions do....this is pretty authentic!

 

 

DIFFERENT CHEESEBURGER SOUP’  Adapted from Grover’s Restaurant, Bflo, NY


Melt  a couple tablespoons butter in a lg. pot

Saute 1-2 large chopped onions till soft and translucent. 

Add ground turkey or beef (about 1-1/2 lbs) and cook it all through

Season meat with pepper and a TINY bit of salt.


Add about a cup of water, a mid size carton of low sodium chicken broth and a heaping tablespoon of Better Than Chicken Boullion. 

If the pot isn't full enough just add more broth.  Funny that they use all chicken base when it is a beef soup recipe!  


Add a full jar of Ragu Cheese Sauce *or Cheese Sauce of your choice

 

Optional:  I also added a half jar of Con Queso Cheese sauce/Medium

 

Add a small container of half/half (or some light cream)


Mix flour or cornstarch and water and whisk till NO lumps.  This is the thickener. 

I have also added Instant Mash Pot flakes to thicken it.

Simmer for a while, then top with chopped/shredded ICEBERG lettuce to bite size (it is the only lettuce I use since it keeps the crunch) and chopped up Roma tomatoes (I prefer Roma since they have more 'meat' and less seeds and wet junk)

 

Add them to the top and enjoy!  You can make this soup as thick as you prefer.

STRAWBERRY Bread

 

3 cups flour

1 teaspoon baking soda

1 teaspoon salt

3 teaspoons cinnamon

2 cups sugar

2 (10 oz) pkgs. frozen STRAWBERRIES, thawed

4 eggs, well beaten

1 1/4 cups oil or melted shortening

1 1/4 cups chopped pecans

 

Sift together (or mix) flour, baking soda, salt, cinnamon and sugar.  Combine it with remaining ingredients.  Spray 3 (8")

loaf pans.  Bake at 350 for 1 hour.

 

NEXT INGREDIENT .... ANY CAKE MIX 

 

Note....I had not tried this recipe before posting it here.  One of those "looks good enough to try" recipes. Yesterday I made it.  DH and I both thought it was very good.  I did purchase frozen strawberries that came with sugar...extra juice.  I drained before putting in mix since there was enough sugar and liquid in it.  It does make 3 loaves so 2 are in the freezer for later or give away.

I have a few family members who do not like frosting...🙀...I know, shocking, frosting is my favorite part of a cake..ha!  OK...here is my go to cake for them..no frosting needed....very moist...chocolate lovers special!  

 

Fast Fixin' Chocolate Chip Cake

 

1 box Devil's Food CAKE MIX

1/4 cup oil

2 eggs

1 1/4 cups water

1 box chocolate instant pudding (4 serving size)

1 small package chocolate chips

 

Preheat oven to 350.  Pour oil into a 9x13" pan.  Tilt until pan bottom is covered with the oil.  Put remaining ingredients into pan; stir with a fork or spoon until blended.  Scrape sides and spread batter evenly in the pan.  Bake at 350 for 35-45 minutes. (Check with toothpick at 35 minutes.) Cool cake and sprinkle with powdered sugar.  Serve with ice cream, if desired.  😋

 

(NOTE...I find it easier to mix ingredients in bowl.  Then add to pan with oil in it.  Baker's choice.)

@walker  You can't quit on us, Walker!  I know we have not supported this thread and you (Thank God for you!) for a while.....but don't quit, please.

 

I am older and it's just me so I just don't cook that much anymore.  Too easy to grab something quick or premade!

 

My G.I.Track gives me a  problem and I can't eat a lot of foods!

 

Friends, I know you fix something....just give us what you add to "store bought" to make a meal!   Anything!

@Zhills ..... THANK YOU for such a nice message!  I really appreciate it.  Let's hope we get more interest and new recipes here.  I always enjoy your recipes and understand the situation.  Hope you are feeling better...I understand that too....more sensitivity to foods as I get older.  🥴

Oven Baked Salmon with Lemon Cream Sauce

 

2-3 Lbs Salmon fillets

salt+pepper to taste

1Tblsp  olive oil for drizzling over Salmon

1Tblsp  parsley finely chopped  For Garnish

  

        FOR the Lemon Cream Sauce

 

2 small to medium shallots  Super finely diced (1/4 cup )

1/4 C fresh Lemon juice

1/4 C Dry White Wine

1/2 C Heavy Cream

1/2 C Cold Butter cut into 8 pieces

 

        METHOD

 

Line a baking sheet with parchment paper.  Arrange salmon fillets Skin side Down, season with salt + pepper,  drizzle with Olive Oil.

BAKE UNCOVERED AT 425 f  for 10-15 minutes or until Salmon is cooked through.

 

In a small sauce pan combine the Diced Shallots, 1/4 C Lemon juice, 1/4 C White wine and simmer over medium heat 7-8 minutes. Whisk in 1/2 C heavy cream and as soon as it comes to a simmer, Reduce heat to Low and slowly whisk in the butter 1 Tblsp at a time then remove from heat and cover with a lid to keep warm.

 

Plate the salmon, drizzle with Lemon sauce and garnish with parsley.

 

notes: I use a small ladle for the sauce as the shallots sink to the bottom of the sauce. 

The Sauce Mellows with time.

First let me say that I have never posted here. I have read the Recipe Forum for many years and have made many of the recipes you wonderful posters post. It makes me sad to see how the interest has dwindled to a minimum of posts. So I am going to post my recipe for 

Blueberry Buttermilk Muffins----15 - 18 muffins

1/2 cup softened butter

1 cup sugar

2 eggs

2 tsp vanilla

2 1/2 cups flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 cup buttermilk

2 cups fresh blueberries

 

Preheat oven to 400.Cream the butter and sugar and add eggs and beat until fluffy. Add vanilla and mix until combined. In another bowl toss the flour, baking powder, baking soda and salt. Add dry ingredients alternately with buttermilk while using your mixer.  Gently fold in blueberries. Line regular muffin tins with cupcake liners or spray with cooking spray. Fill about 2/3 full. Bake for 15 - 17 minutes . Remove and allow pans to rest a bit then remove muffins to continue cooking on a wire rack.

I, too, am a reader, not a poster.  But I will try to be a better participant because I have gotten so many good recipes from this thread over the years. So here goes:

 

Daddy’s Favorite Sausage & Fried Potatoes Skillet Supper

 

1 pound smoked sausage, cut into bite-sized pieces

1 large onion, diced

1 green bell pepper, diced

5 large russet potatoes (about 2 pounds), peeled & diced

3 Tablespoons vegetable oil (OR bacon drippings)

½ cup water

1 teaspoon onion powder, optional

1 teaspoon garlic powder, optional

1 teaspoon salt

1 teaspoon ground black pepper

 

In a large skillet, over MEDIUM heat, sauté sausage pieces until well-browned.

Stir in diced onion, diced bell pepper, diced potatoes, vegetable oil, water, onion powder, garlic powder, salt & ground black pepper; bring to a boil.

Reduce heat to MEDIUM-LOW; cover & cook for about 10 minutes, using a spatula to scrape bottom of pan & flip potatoes & sausage once or twice during cook-time so they don’t stick to bottom of pan.  Uncover pan; increase heat to MEDIUM-HIGH; and cook for another 10 minutes or so, flipping sausage/potatoes occasionally, until potatoes are cooked through & crispy around the edges.

 

NEXT INGREDIENT: Broccoli or your favorite green vegetable

THANK YOU FOR POSTING EVERYONE!  You are breathing new life into Recipe Game.  We all enjoy reading new recipes from others.  Here is a recipe I may have gotten here but did not note.  It is very good and easy to make.

 

BROCCOLI-CORN CASSEROLE

 

1 pkg. frozen chopped BROCCOLI, thawed

1 can cream style corn

1 tablespoon minced onion

2 cups Pepperidge Farm Stuffing Mix (crumbs)

1 stick butter, melted 

 

Mix crumbs into the melted butter.  Stir 3/4 cup crumbs with other ingredients.  Put in a buttered casserole dish (2-3 quart size).  Then top with rest of crumbs.  Bake at 350 for 30 minutes.
