@SouthernBee @That's 100% right. Pretty much everyone likes cookies, and it is hard to find the right gift. I myself enjoy cookies as a gift. It's a homemade gift from the heart.

APPETIZER....Easy and Good

 

 

Marinara Sauce with Baked Cheese


8 ozs. fresh mozzarella cheese, cubed

2 tablespoons chopped fresh basil leaves

2 cups chunky marinara sauce

Baguette slices

 

Heat oven to 350.  Place cheese in shallow 2 quart casserole.  Sprinkle with basil. Spoon marinara around cheese.  Bake 8-10 minutes or until cheese is hot and bubbly.  Serve with baguette slices.

 

NEXT ...... LETTUCE OR SPINACH...Salad Anyone?

Fettuccine with Spinach Ricotta Sauce 

 
2 tablespoons olive oil
1 medium onion, chopped
3 large garlic cloves, minced
1 tablespoon all-purpose flour
2 cups whole milk (do not use nonfat or lowfat)
1 package (10 ounce size) frozen chopped spinach, thawed and well drained
3/4 cup ricotta cheese
1/3 cup freshly grated Parmesan cheese
10 oil packed sun-dried tomatoes, drained, cut into strips
3 tablespoons chopped fresh basil
1/4 teaspoon ground nutmeg
salt and pepper, to taste
1 pound fettuccine pasta, cooked to package directions
1/2 cup minced green onions
1/2 cup toasted pine nuts
grated Parmesan cheese for garnish

 
Heat oil in a heavy medium saucepan over medium heat.

 

Add onion and cook until translucent, stirring occasionally, about 4 minutes. Add garlic and cook 1 minute. Stir in flour and cook 1 minute.

Gradually whisk in milk and cook until sauce is smooth and bubbling, stirring constantly, about 4 minutes.

 

Mix in spinach, ricotta, Parmesan cheese, sun-dried tomatoes, basil and nutmeg. Season with salt and pepper.

 Simmer over medium-low heat until heated through, stirring occasionally, about 5 minutes.

 Toss drained fettuccine with sauce. Garnish with green onions and pine nuts. Pass the Parmesan cheese at the table.

Ingredients

  • 3 cucumbers
  • 3 tablespoon Tajin seasoning
  • ½-3/4 cup mayonnaise
  • cherry tomatoes (optional)

Instructions

  • Clean and slice the cucumbers. You can use a slicer or slice by hand, whatever works best for you. 
  • Mix together the Tajin seasoning and the mayonnaise into a bowl.
  • Add the sliced cucumbers to the mixture and fold them together until the cucumbers are covered. 
  • You can serve right away or set it in the fridge and let it cool.

The following recipe isn't 'Mexican', but it does call for taco seasoning! Smiley Happy
 
Southwest Pasta Salad
* ingredients are approximate
 
1 lb. small shell pasta, cooked & rinsed
1 red bell pepper, diced
1/4 red onion, diced
2 green onions, thinly sliced
1 Cup corn kernels (defrosted frozen corn is fine)
1 small can sliced black olives, drained
 
Dressing:
1 Cup mayo
1/4 Cup sour cream
1 T fresh lemon juice, or to taste
1.5 T taco seasoning, or more to taste
2 T chopped cilantro
S & P
 
  • 1. Transfer the drained pasta to a large bowl. Add the red bell pepper, red & green onion, corn & sliced black olives. Toss lightly.
  • 2. In a small bowl, mix the mayonnaise, sour cream, lemon juice, taco seasoning & chopped cilantro; season with salt and pepper. 
  • 3. Add sauce to the macaroni mixture and toss until evenly coated. If necessary, season with more salt and pepper. Chill before serving. Sprinkle with a bit of chopped cilantro or parsley to add a little color.

Next Ingredient: orange anything: flavoring, juice, fruit, or even just the color

@sabatini  This is not a recipe, just a lil' tip.

                  When making a white cake, substitute Half the Vanilla with food grade

                 Orange oil.  Frost with vanilla frosting and your cake will have a creamsicle

                  like taste.

I've never heard of food grade orange oil! Sounds like you don't need much.

 

Could you please choose the next ingredient?

I've been looking for a sloppy joe recipe, so I thought I'd go ahead and post it.  I'll be making it next week.

  • 1 small onion finely chopped
  • 1/2 small green bell pepper, seeded and finely diced
  • 1 Tbsp worchestershire sauce
  • 1 1/2 tsp yellow mustard
  • 1 Tbsp brown sugar
  • 15 oz can tomato sauce
  • 1 lb lean ground beef, 85%-90% lean
  • 1 Tbsp olive oil
  • ½ tsp salt or to taste
  • ¼ tsp ground black pepper, or to taste
  • 3 garlic cloves, minced
  • 1/4 cup water, optional, or added to desired consistency
  • 4 hamburger buns, toasted if desired
  1. Chop veggies – Finely chop the onion and green bell pepper.
  2. Make sauce – In a bowl, combine worcestershire sauce, yellow mustard, water, brown sugar, and tomato sauce.
  3. Saute beef – In a deep skillet, heat oil over med/high heat. Add the ground beef and break up as it is being cooked. Season with salt and pepper and add in the finely chopped onion and green pepper. Cook until vegetables are tender.
  4. Add sauce – Add in the garlic and cook until fragrant. Pour in the sauce and cook over medium high heat until the sauce comes to a soft boil.
  5. Simmer – Reduce the heat to low and cook for 10 minutes, add more salt and pepper if needed.
  6. Serve – spoon the saucy beef mixture on toasted buns and serve as sandwiches.

Haven't had a Sloppy Joe since I was a kid & really do think I'd like to have one!

@sabatini Your Southwest pasta salad looks so good. I will definitely be trying this. Thank you for the recipe. I agree, tanjin is such a fabulous seasoning. I first read about on th recipe forum and it has been such a good find!

 

I don't have a fresh corn at the moment but I made this tonight with frozen corn and it was really good. It went well with the green chili enchiladas I made.

 

 

 SPICY CORN SLAW

INGREDIENTS
  • 1 (14 oz) bag cole slaw mix
  • 2 cups corn, fresh or frozen and thawed
  • ¼ cup minced jalapeño, seeds removed
  • ½ cup roughly chopped cilantro
  • 3 green onions, chopped
DRESSING
  • ½ cup mayo
  • Juice of 2 limes
  • 2 tablespoons sugar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
PREPARATION
  1. In a large bowl, combine the cole slaw mix, corn, jalapeno, cilantro, and green onions. Toss to combine.
  2. In a separate small bowl, mix together all dressing ingredients until smooth.
  3. Pour dressing over the salad and mix until fully coated. Chill until ready to serve.

NEXT: Does anyone have a chicken breast recipe for two people? I need to do something with these last two chicken breasts sitting in my fridge!
