@SouthernBee @That's 100% right. Pretty much everyone likes cookies, and it is hard to find the right gift. I myself enjoy cookies as a gift. It's a homemade gift from the heart.

APPETIZER....Easy and Good
Marinara Sauce with Baked Cheese
8 ozs. fresh mozzarella cheese, cubed
2 tablespoons chopped fresh basil leaves
2 cups chunky marinara sauce
Baguette slices
Heat oven to 350. Place cheese in shallow 2 quart casserole. Sprinkle with basil. Spoon marinara around cheese. Bake 8-10 minutes or until cheese is hot and bubbly. Serve with baguette slices.

Fettuccine with Spinach Ricotta Sauce
2 tablespoons olive oil
1 medium onion, chopped
3 large garlic cloves, minced
1 tablespoon all-purpose flour
2 cups whole milk (do not use nonfat or lowfat)
1 package (10 ounce size) frozen chopped spinach, thawed and well drained
3/4 cup ricotta cheese
1/3 cup freshly grated Parmesan cheese
10 oil packed sun-dried tomatoes, drained, cut into strips
3 tablespoons chopped fresh basil
1/4 teaspoon ground nutmeg
salt and pepper, to taste
1 pound fettuccine pasta, cooked to package directions
1/2 cup minced green onions
1/2 cup toasted pine nuts
grated Parmesan cheese for garnish
Heat oil in a heavy medium saucepan over medium heat.
Add onion and cook until translucent, stirring occasionally, about 4 minutes. Add garlic and cook 1 minute. Stir in flour and cook 1 minute.
Gradually whisk in milk and cook until sauce is smooth and bubbling, stirring constantly, about 4 minutes.
Mix in spinach, ricotta, Parmesan cheese, sun-dried tomatoes, basil and nutmeg. Season with salt and pepper.
Simmer over medium-low heat until heated through, stirring occasionally, about 5 minutes.
Toss drained fettuccine with sauce. Garnish with green onions and pine nuts. Pass the Parmesan cheese at the table.

@sabatini This is not a recipe, just a lil' tip.
When making a white cake, substitute Half the Vanilla with food grade
Orange oil. Frost with vanilla frosting and your cake will have a creamsicle
like taste.

I've never heard of food grade orange oil! Sounds like you don't need much.

@sabatini Your Southwest pasta salad looks so good. I will definitely be trying this. Thank you for the recipe. I agree, tanjin is such a fabulous seasoning. I first read about on th recipe forum and it has been such a good find!
I don't have a fresh corn at the moment but I made this tonight with frozen corn and it was really good. It went well with the green chili enchiladas I made.
