Re: APRIL 2024 RECIPE GAME

[ Edited ]

OK, I will give QVC a big plug with this recipe.  I do not buy a lot of food items from the Q but VERY GLAD I tried this one.....Jenny Lee Swirl Bread**...their French Toast is delicious!  (** just saw the sampler on Q today...2 small loaves of each type...good way to try them..6 loaves/$30)

Gourmet French Toast by Jenny Lee

12 slices of Jenny Lee Cinnamon Swirl, Cinnamon Raisin

or Cinnamon Apple Bread (all good)

4 medium eggs

1 cup cold milk

1 teaspoon cinnamon

1/2 teaspoon ground nutmeg, optional

2 teaspoons VANILLA EXTRACT

pinch of salt

powdered sugar, if desired

Beat together eggs, milk, salt, cinnamon, nutmeg (if using) and VANILLA.  Preheat griddle or skillet to medium high (lightly oil).  Dunk each slice of bread in egg mixture on both sides.  Place on heated surface and cook both sides until golden brown.  Place on serving dish and sprinkle with powdered sugar.  Serve with maple syrup.  Enjoy!

(I did not use nutmeg or powdered sugar.  Bread is thin sliced and round.  It has a sugar coated crust so I do not put into toaster.)

South of the Border Dip

1 (8oz) cream cheese, softened

1 cup mild thick and chunky salsa (or your favorite)

1 cup shredded cheddar cheese

Mix cream cheese and salsa together.  Stir in cheese.  Refrigerate.  Serve with Fritos Scoops or other dipping type chip/cracker.

I just finished making these absolutely delicious cookies a few minutes ago. These are by far my favorite! I bake them for 21 minutes and that's it.

DoubleTree Chocolate Chip Cookie

Makes 26 cookies

Ingredients

  • ½ pound butter, softened (2 sticks)
  • ¾ cup + 1 tablespoon granulated sugar
  • ¾ cup packed light brown sugar
  • 2 large eggs
  • 1 ¼ teaspoons vanilla extract
  • ¼ teaspoon freshly squeezed lemon juice
  • 2 ¼ cups flour
  • 1/2 cup rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • Pinch cinnamon
  • 1 3/4 cups chopped walnuts
  • 2 2/3 cups Nestle Tollhouse semi-sweet chocolate chips

Directions

  1. Cream butter, sugar and brown sugar in the bowl of a stand mixer on medium speed for about 2 minutes.
  2. Add eggs, vanilla and lemon juice, blending with mixer on low speed for 30 seconds, then medium speed for about 2 minutes, or until light and fluffy, scraping down bowl.
  3. With mixer on low speed, add flour, oats, baking soda, salt and cinnamon, blending for about 45 seconds. Don’t overmix.
  4. Remove bowl from mixer and stir in chocolate chips and walnuts.
  5. Portion dough with a scoop (about 3 tablespoons) onto a baking sheet lined with parchment paper about 2 inches apart.
  6. Preheat oven to 300°F. Bake for 20 to 23 minutes, or until edges are golden brown and center is still soft.
  7. Remove from oven and cool on baking sheet for about 1 hour.

Cook’s Note

You can freeze the unbaked cookies, and there’s no need to thaw. Preheat oven to 300°F and place frozen cookies on parchment paper-lined baking sheet about 2 inches apart. Bake until edges are golden brown and center is still soft.

How about appetizers? I can't seem to master them, but would love some ideas.

@SouthernBee  This is an amazing cookie. Not like any other chocolate chip cookie I've ever had! I have to behave....they become addictive. I'm glad you like them too! 🍪

@Effie54 : I purchase from Amazon the special cellophane treat bags sized perfect for cookies and have purchased from the dollar store the small tin containers to give cookies as special gifts. Friends always return the tin containers for refills. They prefer the cookie gifts more than any other item for their Birthday or Christmas gift.

@SouthernBee That's a great idea! I too have a few pretty Currier & Ives tins that I give to friends and neighbors when I make cookies. My neighbor (a retired teacher) said that I got an A++ in making those cookies. I had to laugh. Cookies do make great gifts.

@Effie54 : Sometimes it is easier and cheaper for me to make the cookies for gifts instead of trying to find another gift .
