YUM...loving these recipes posted recently....good for summer ahead.  @GenXmuse ... easiest recipe for those chicken breasts I can think of....dip in Italian Dressing then bread crumbs...cover...bake at 350 for 30 minutes, uncover for another 30 minutes.  Or, spray/grease a Pyrex dish...add chicken breasts ...sprinkle with lemon-pepper seasoning, put lemon slices on top, sprinkle with parsley...bake at 325, uncovered, one hour.

@walker, I think I'll use your recipe on the sole chicken breast that I'm currently defrosting. TY! 

 

ETA: I tried this concept out w/ my granddaughter yesterday. As I suspected it does NOT work! This technique shall be filed under "failure", or "what was I thinking?" LOL
However, we salvaged it.
We just spread the cinnamon/brown sugar/butter mixture over each pancake after we flipped it, & once plated, drizzled the icing on top.
My granddaughter loved her cinnamon roll pancakes! Perfect for her, as she hates maple syrup.

A member of a group I belong to recently posted this recipe for her Cinnamon Roll Pancakes. Cute concept, though I haven't tried it.

Easy enough to try w/ your own recipe for pancakes and/or icing.

 

Here is her recipe, as written:

Cinnamon Roll Pancakes w/ Cream Cheese Drizzle
Filling:
* 1/4 cup unsalted butter just barely melted
* 1/4 cup + 2 tablespoons packed brown sugar
* 1/2 tablespoon ground cinnamon
* 1 teaspoon vanilla
Icing:
* 1 stick cream cheese (softened)
* 1 tbsp vanilla
* 1 cup powder sugar
* Milk (to desired consistency)
Pancakes:
* 1-1/2 cups milk
* 1/4 cup white vinegar
* 2 cups all-purpose flour
* 1/4 cup white sugar
* 2 teaspoons baking powder
* 1 teaspoon baking soda
* 1 teaspoon salt
* 2 egg
* 1/4 cup butter, melted
* 1 teaspoon vanilla
* Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".
* Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
* Heat a large skillet on medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet.
* In a circular motion add cinnamon filling BEFORE bubble form.
* When bubbles begin to form flip with a spatula, and cook until browned on the other side.
* Drizzle with icing

Blended Flavors Chopped Salad

Ingredients

  • 2 cups strawberries, hulled and halved
  • 1 pint cherry tomatoes, halved
  • 3 garden crisp cucumbers, chopped
  • 1/2 small red onion, thinly sliced
  • a small handful of fresh mint, leaves picked
  • a small handful of fresh cilantro, leaves picked

Toppings:

  • 4 Tbsps pine nuts
  • 4 Tbsps crumbled feta cheese

Dressing:

  • 1 Tbsp Dijon mustard
  • 4 Tbsps extra-virgin olive oil
  • 1 Tbsp raw honey
  • 1 fresh garlic clove, minced
  • 1/2 tsp sea salt
  • 1/4 tsp ground pepper

Instructions

  1. In a small bowl add all dressing ingredients. Whisk really well, until emulsified.
  2. In a medium bowl combine all of your prepped ingredients for the salad.
  3. Drizzle your dressing and gently stir to coat.
  4. Sprinkle with toppings and serve!
  5. Enjoy!

Your "Happy Place" recipe

I guess home is my happy place.  On a chilly day in my warm home, this recipe hits the spot for comfort food.  My second happy place is anywhere on the water.  Pot Pies good anywhere!  Thank you to MarkCharles Misilli of QVC.

Recipe found in his cookbook, Easy Everyday Favorites.

 

HOMESTYLE CHICKEN POT PIE

 

1 (14.1 oz) package refrigerated pie crusts

2 lbs. boneless, skinless chicken breasts, cut in 1" chunks

1 cup frozen sliced carrots

1 cup frozen green peas

1 stick butter

1/3 cup chopped onion

1/3 cup all-purpose flour

1/2 teaspoon celery seed

3/4 teaspoon salt

1/4 teaspoon black pepper

1-3/4 cups chicken broth

3/4 cup milk

 

Preheat oven to 425.  Place chicken in a large pan with enough water to cover.  Over high heat, boil for 10 minutes.  Stir in carrots and peas and continue boiling for 2 minutes.  Drain in a colander and set aside.  Don't worry about thawing veggies first, since you don't need to!

 

In same pan over medium heat, melt butter and cook onions for 5 minutes or until tender.  Add flour, celery seed, salt and pepper.  Whisk for 1 minute or until golden.  Slowly stir in chicken broth and milk; cook until thickened stirring constantly.  Remove from heat and stir in chicken mixture.  Place 1 pie crust in a 9" deep dish pie plate.  Pour chicken filling into pie crust.

 

Place second pie crust on top of mixture; seal and flute edges.  Cut 4 (1") slits in top of crust.  This will allow steam to escape while cooking and prevent top crust from getting soggy.  Bake 30-35 minutes, or until crust is golden brown and filling is bubbly.  Let sit 5 minutes before serving.

 

(***Sometimes I take peas and carrots from a package that combines both.  I have also added corn.  Good anyway you do it.  Also, in case of any bubbling over, I put pie dish on a cookie sheet to bake.  Remember to let pie crusts sit out of refrigerator for about 30 minutes; easier to unroll and use.  Easy to fix.)

This salad is a great addition to any bbq, picnic, pot luck, etc.

 

Jicama Mango Salad
 
2 pounds jicama, peeled & cut into matchsticks
1 ripe but fairly firm mango, cut into matchsticks (very ripe mango will disintegrate)
1 small red bell pepper, matchstick cut
1 small yellow bell pepper, matchstick cut
3 green onions, thinly sliced
1 small can mandarin oranges
1/2 C chopped cilantro
 
Dressing 1: (adjust sweetness to taste)
1/4 Cup red wine vinegar
1/4 Cup rice wine vinegar
2 T sugar
S & P
pinch crushed red pepper
 
Dressing 2:(adjust sweetness to taste)
3 juiced limes
2 T honey
S & P
dash of cayenne pepper
 
* use a vegetable peeler to peel mango & jicama
1. Toss together the jicama, mango, bell peppers, green onion, oranges & cilantro
2. In a small bowl whisk together your dressing of choice
3. Pour dressing over mixture, toss well, & chill.

Dream Fruit Dip

 

If looking for a sweet dip for fruit, my family enjoys this classic.

 

Ingredients:

12 oz. cream cheese, softened

1 c. Confectioner's sugar

1 - 7 oz. Jar marshmallow cream

1 c. sour cream

2 t. vanilla extract

1-2 t. almond extract

2 t. cinnamon

 

Using electric mixer, beat cream cheese till soft and smooth. Add sugar and beat till we'll blended. Add remaining ingredients and blend till well combined. Chill several hours.

FYI for anyone who'd like to know.

I edited my above post regarding 'Cinnamon Roll Pancakes' to say that the concept definitely does NOT work. Whoopsie!

As suspected, the swirl just melts away making a big mess.
