I could eat this every day, & did during green bean season!

 

Green Beans with Garlic & Pecans

 

Ingredients

  • 1 T extra-virgin olive oil, + 1 tsp butter
  • 2 fat cloves garlic, minced 
  • ½ cup chopped pecans, toasted
  • ½ teaspoon kosher salt, or to taste
  • 1 pound green beans, trimmed (about 8 cups)

Instructions

1.  Add 1 to 2 inches of water to a large pot fitted with a steamer attachment, cover and bring to a boil over high heat. Add green beans to steamer, and cook, covered until the beans are crisp tender, 4 to 5 minutes.

2. Heat oil & butter in a small skillet over medium heat. Add garlic and cook, stirring until the garlic is just barely showing signs of turning brown, 30 to 90 seconds. Immediately pour into a large mixing bowl to stop cooking

3. Transfer the crisp/tender green beans to the bowl. Add pecans and salt to taste and toss to coat.

 

*Note* To toast pecans: toss chopped pecans in a dry skillet, or with a bit of butter until they start to turn golden, or when you begin to smell them.

        Grannie's Groovy Granola

                                       

           Preheat oven to 250 degrees

 

        3 3/4 cups Old Fashioned Rolled Oats

        1/4 cup raw sunflower seeds

         1/2 cup honey

         1/4 cup canola or vegetable oil

        

         Mix all ingredients together and spread onto baking sheet

         with at least 1/2 inch sides or other large baking pan.

         I use a large broiler pan.

 

          Bake at 250 degrees     50-60 minutes, stirring every 15

                                               minutes.

 

          Remove from oven and add 1/2 cup raisins, nuts or dried           fruits that you like. Let cool and break apart. Store in air

          tight container.

HAZELNUT Milkshake- Nutella

INGREDIENTS
1 cup chilled whole milk (full-fat milk)
5-6 scoops vanilla ice cream
4 tablespoons HAZELNUT SPREAD

 

INSTRUCTIONS

Add milk, ice cream, and HAZELNUT SPREAD to the large jar of a blender and blend until smooth.


Tip - The ice cream should be a little soft (not runny) when added to the blender. If it’s too hard it will not blend properly.


Tip – Do not add Nutella as the first thing in the jar as it might get stuck to the blades and not mix properly.


Pour the milkshake into the chilled serving glasses.


Top with whipped cream, drizzle some chocolate syrup and sprinkle crushed toasted hazelnuts on top and serve immediately.

ITALIAN SLOPPY JOES 

 

Ingredients

 

1 lb ground Italian sausage

1 small red bell pepper, diced

1 small green bell pepper, diced

1 small onion, diced

1 ½ cups spaghetti sauce

 

Instructions

 

In a large skillet over medium heat begin to sauté peppers and onions for 2-3 minutes.

Add Italian sausage to the pan. Brown and crumble the sausage until cooked through. Drain any excess grease and put back into pan.

Stir in spaghetti sauce. Let mixture simmer over medium heat until the sauce is thickened.

Spoon onto rolls and serve!

I'm sure I've posted this on recipe board before ... but these are really easy and very tasty.

 

Air Fryer JALAPENO Poppers - Sweet Cs Design

INGREDIENTS
15 fresh JALAPENOS
8 oz cream cheese
¾ cup Colby Jack cheese (shredded works best)
1 tsp garlic salt
1 tsp onion powder
½ cup panko breadcrumbs
¼ cup bacon bits
1 tsp red pepper flakes* (optional or add a bit of your favorite hot sauce)

 

INSTRUCTIONS
Cut each jalapeno in half lengthwise and use a spoon to scrape out the insides of each half so they are hollow. Set the prepped jalapenos aside.


In a medium sized mixing bowl, stir together the cream cheese, Colby Jack cheese, and half of the bacon until the cheese and bacon is evenly distributed throughout the cream cheese.


Using a spoon or spatula, fill each jalapeno half with the cream cheese filling.


In a small bowl, stir together the breadcrumbs and remaining bacon. Dip the top cream cheese side of each popper into the breadcrumbs to fully coat the cream cheese.

 
Preheat the air fryer for 5 minutes at 390 degrees Fahrenheit. Once the air fryer has preheated, cook the jalapeno poppers 5-6 at a time for 5 minutes.

Ice Cream Kolachkes

 

  • 2 cups butter, softened
  • 1 pint vanilla ice cream, softened
  • 4 cups all purpose flour
  • 2 tbs. sugar
  • 2 (12 oz) cans apricot and/or raspberry filling
  • confectioner's sugar, optional

1. In the bowl of a heavy duty stand mixer, beat butter and ice cream until blended (mixture will appear curdled).

Add flour and sugar, mix well.

Divide the dough into 4 portions.

Cover and refrigerate for 2 hours or until easy to handle.

2. Preheat oven to 350°.  On a lightly floured surface, roll a portion of the dough into a 12x10" rectangle, then cut rectangle into 2" squares. 

Place a teaspoonful of filling in the center of each square.

Overlap two opposite corners of dough over filling and pinch tightly to seal.

Place 2" apart on ungreased baking sheets.

Repeat with the remaining dough and filling.

3. Bake for 11-14 minutes or until the bottoms are lightly browned. 

Cool for 1 minute before transferring to wire racks.

Sprinkle with confectioner's sugar if desired.

Potato Leek Soup  - From Once Upon a Chef

INGREDIENTS

3 tablespoons unsalted butter
4 large LEEKS white and light green parts only, roughly chopped (about 5 cups)
3 cloves garlic, peeled and smashed
2 pounds Yukon Gold potatoes, peeled and roughly chopped into ½-inch pieces
7 cups chicken or vegetable broth
2 bay leaves
3 sprigs fresh thyme
1 teaspoon salt
¼ teaspoon ground black pepper
1 cup heavy cream

Chives, finely chopped, for serving


INSTRUCTIONS
Melt the butter over medium heat in a large soup pot. Add the leeks and garlic and cook, stirring regularly, until soft and wilted, about 10 minutes.

 

Adjust the heat as necessary so as not to brown.

 

Add the potatoes, broth, bay leaves, thyme, salt and pepper to pot and bring to a boil. Cover and turn the heat down to low. Simmer for 15 minutes, or until the potatoes are very soft.


Fish out the thyme sprig and bay leaves, then purée the soup with a hand-held immersion blender until smooth. (Alternatively, use a standard blender to purée the soup in batches; see note.) Add the heavy cream and bring to a simmer. Taste and adjust seasoning with salt and pepper. If soup is too thin, simmer until thickened. If it's too thick, add water or stock to thin it out.

 

Garnish with fresh herbs if desired.

 

Note: If using a standard blender to purée the soup: be sure not to fill the jar more than halfway; leave the hole in the lid open and cover loosely with a dishtowel to allow the heat to escape; and pour blended soup into a clean pot.

MONKEY Bread MUFFINS

 

1 (12 oz) can refrigerated biscuits (10 in can)

3 tablespoons MAPLE Syrup

1/4 cup (1/2 stick) butter, melted

2/3 cup sugar

1 tablespoon ground cinnamon

1/2 cup finely chopped pecans

 

Preheat oven to 375.  Place cup cake liners in a 12 cup MUFFIN pan.  Cut each biscuit into 4 pieces; set aside.

 

Combine MAPLE syrup and melted butter.  In separate bowl mix sugar, cinnamon and pecans.

 

Dip each biscuit piece into the MAPLE butter mixture, then roll in the sugar mixture.  Place 3 or 4 coated pieces in each MUFFIN cup, pressing down to compact.

 

Bake the MUFFINS for 15-17 minutes.  Allow to cool in pan for 5 minutes before removing.  Serve warm.

This cake recipe using NECTARINES is from a site that I can't post the exact name....but recipe is very yummy. Also good using peaches.

 

NECTARINE UPSIDE-DOWN CAKE - From D@@@ Delicious

INGREDIENTS
2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
½ teaspoon salt
1 cup buttermilk
½ cup 1 stick unsalted butter, melted and divided
2 large eggs
½ cup brown sugar, packed
4 NECTARINES, sliced into 1 1/2-inch thick wedges


INSTRUCTIONS
Preheat oven to 350 degrees F.


In a large bowl, combine flour, sugar, baking soda and salt.
In a large glass measuring cup or another bowl, whisk together buttermilk, 4 tablespoons butter and eggs. Pour mixture over dry ingredients and stir using a rubber spatula just until moist.


Add remaining 4 tablespoons butter to the bottom of a cast iron skillet or 9-inch cake pan, swirling the pan until the bottom and sides are well coated. Sprinkle brown sugar evenly over the melted butter. Arrange nectarine slices on top in a single layer. Scoop the batter evenly over the nectarines, smoothing out the top.


Place into oven and bake for 45 minutes, or until a tester inserted in the center comes out clean.


Let cool for 5-10 minutes. Run a knife around the edge of the cake and turn upside down onto a serving plate.


Serve immediately.

ORZO with Spinach and Tomato Salad*

 

1 cup uncooked ORZO

3-4 cups fresh baby spinach

8 ozs. Grape tomatoes

3 green onions

 

Dressing.....3 tablespoons red wine vinegar

                   1 clove garlic, minced

                   1 teaspoon dried basil

                   1/8 teaspoon salt, more to taste

 

Cook ORZO.....boil 2 cups water with some salt.  Add 1cup ORZO and let cook for 10-15 minutes until tender, stirring occasionally.  Meanwhile make dressing.  Mix together garlic, vinegar, basil and salt.  Whisk to combine; set aside.  Halve the tomatoes....Slice green onions....Roughly chop spinach...mix together.

 

When ORZO is cooked, drain and immediately add to salad mix.  Stir well.  (The heat from the ORZO will lightly wilt the spinach.)  Pour dressing over top and toss to combine.  Recommended ....cover and let sit in refrigerator for an hour before serving so flavors blend.
