I made this tonight and DH loved it. I used 1 pound of extra large shrimp and
smaller pan. I would double the wine and lemon if you serve with thin spaghetti. I also put in under broiler for 2 minutes to brown.

DRY RUB (for pork or chicken)
1/4 cup Golden Monk Fruit
1 Tablespoon pink salt
1 Tablespoon paprika
1 Tablespoon black pepper
1 Tablespoon onion powder
2 teaspoons garlic powder
1 teaspoon ground cumin
1 teaspoon cayenne
1 teaspoon celery salt
1 teaspoon ground cinnamon
Blend all ingredients together and use as needed on pork or chicken. I like to make a larger batch (quadrupled recipe) and keep on hand. It keeps well.
FYI - golden monk fruit is an alternative for light brown sugar.

BACON-Wrapped Fingerling Potatoes with Thyme
1 lb. fingerling potatoes, washed, patted dry and stem
ends removed
1 tablespoon minced fresh thyme
2 tablespoons olive oil
1/2 teaspoon black pepper
1/4 teaspoon paprika
1 pkg. (1/2 lb.) BACON
1/4 cup chicken broth
Toss potatoes with thyme, olive oil, pepper and paprika; set aside. Cut each BACON slice in half lengthwise; wrap half slice BACON tightly around each potato.
Heat large skillet over medium heat; add potatoes. Reduce heat to medium-low and cook until lightly browned and some BACON fat has rendered out. BACON should sear "shut" around potatoes.
Place potatoes in a crock pot/slow cooker. Add chicken broth, cover and cook on High for 3 hours.

Hi to all that enjoy recipes here.....I enjoy reading all the recipes posted and try many but forget to post comments. Thanks to all who participate and @momtochloe for starting us every month. @Zaimee I did try the Shrimp Scampi tonight...very good!! Just two of us so I did have about 1#+ of shrimp....doubled wine and lemon juice ...good suggestion..used smaller dish too.....served over linguine....easy to fix...thanks! Next up will be @Zhills ... Pasta Pomodoro next week or two....good meals for some rainy days here. And, @GenXmuse....looking forward to someone's English Muffin recipe but in meantime...I will put your eggs on the muffin!! 😁

English Muffin Hot Bites
Comprised of ideas from many similar recipes on the internet.
Featured Ingredient: English Muffins
1 & 1/4 cups mayonnaise
1 & 1/2 cups grated cheddar cheese
2 tablespoons everything bagel seasoning
dash of salt (if NO salt is in bagel seasoning)
dash of Tabasco sauce OR Worcestershire sauce
dash of white pepper
4 English muffins
Combine cheese, mayonnaise and seasonings thoroughly.
Preheat broiler and toast split muffins lightly. Remove and top with above mixture and return to the broiler and heat until bubbling hot.
Cut each muffin half in fours to serve to your party guests.

CINNAMON-Applesauce Salad
2 pkgs. (3 oz) Orange Jell-O
1 3/4 cups boiling water
3/4 cup cold water
1 cup applesauce
1 cup sour cream
1/4 teaspoon CINNAMON
Dissolve 1 pkg. gelatin in 1 cup boiling water, stir in cold water. Pour into a 6 cup ring mold. Chill until set, but not firm. Meanwhile dissolve remaining gelatin and CINNAMON in 3/4 cup boiling water. Then blend in the applesauce and sour cream. Chill until mixture starts to thicken. Spoon into the salad mold; chill until firm-about 3 hours. Unmold and garnish with salad greens.
Tip...spray salad mold with cooking spray and salad will slip out easier.
NEXT INGREDIENT .... MILK, regular or Evaporated Milk
