Brussel Sprouts & Turkey Rice Casserole
INGREDIENTS
1 c. white rice
extra-virgin olive oil
1 lb. brussels sprouts, trimmed and cut in half
kosher salt
Freshly ground black pepper
1 lb. ground turkey
3 garlic cloves, minced
1 c. diced red onion
1 tsp. poultry seasoning
2 tbsp. all-purpose flour
1 1/2 c. low-sodium chicken stock
1/4 c. chopped parsley
DIRECTIONS
Prepare rice according to package instructions.
Meanwhile, in a large sauté pan over medium-high heat add drizzle of olive oil. Place the brussels sprouts cut-side down and cook until golden brown, about 3 minutes. Season with 1/2 tsp salt, 1/4 tsp black pepper and sauté for 1 minute. Transfer to a plate.
Return pan to medium-high heat, add 1 tbsp olive oil and brown ground turkey. Using a spoon, break up meat into medium sized chunks. Add garlic, red onion, poultry seasoning; stir for 2 to 3 minutes. Whisk in flour until absorbed and stir in stock. Bring to a boil and simmer on low for 2 to 3 minutes.
Stir in rice and brussels sprouts until warmed through. Garnish with parsley and serve immediately.

Turkey Porcupines in Basil-Tomato Sauce
1 lb. ground turkey
1/2 cup uncooked regular rice
1/4 cup finely chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons oil
2 teaspoons sugar
1 teaspoon dried basil leaves
1 cup water
2 (8 oz.) cans tomato sauce
Combine ground turkey, rice, onion, salt and pepper; mix well.
Shape into 16 balls (approx. depending on size). In skillet, lightly brown meatballs in oil, carefully turning to brown evenly. Combine remaining ingredients; blend well. Pour over meatballs; bring to a boil. Reduce heat; cover and simmer 45 minutes, stirring occasionally.

Rigatoni.....Quick and Easy!
1 lb. ground ITALIAN SAUSAGE
1 box Rigatoni Pasta
1 jar favorite Spaghetti Sauce
Shredded Mozzarella Cheese
Parmesan Cheese
Brown ITALIAN SAUSAGE, drain and add jar of Spaghetti Sauce; let simmer few minutes to heat together. Meanwhile, cook Rigatoni, drain and toss with Spaghetti Sauce mixture. Put half in 9 x13" baking dish (or little smaller). Sprinkle with mozzarella cheese followed with remaining Spaghetti Sauce mixture. Add more mozzarella cheese and sprinkle Parmesan cheese on top.
Bake, uncovered, at 350 for 20-30 minutes.

YSwedish Cookie Bars
1 cup RAISINS
1 cup water
1 cup butter, softened
1 1/2 cups sugar
2 eggs
1 1/2 teaspoons vanilla
3 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped walnuts
Simmer RAISINS in water, 20 minutes; set aside to cool. Cream butter with sugar; beat in eggs and vanilla. Add dry ingredients and mix together well. Then add the nuts and undrained RAISINS.
Spread in 9 x 13" pan. Bake at 350 degrees for 25-30 minutes. Cool and cut into bars.
