ANZAC Cookies (Good for mailing!)

I haven't made these yet, but they were posted on the Soliders Angels' Angel Baker board; they travel well and are good to send to friends/family in the military, away at school, or whatever.

ANZAC stands for Australia and New Zealand Army Corps. Supposedly these cookies were made by wives during the war to send to their husbands as a nutritious treat, and they were made from ingredients more readily available down under at the time. The recipe calls for “desiccated” coconut. You can use regular coconut; they will spread quite a bit and remain very chewy. You can make something similar by spreading coconut in a thin layer on a cookie sheet, and baking it at 250 degrees for 10 minutes. It shouldn’t be more than barely brown, just dried out. They have no egg in them, so they keep well. The recipe makes 18-24 large cookies.

ANZAC COOKIES

1 cup regular oatmeal (not quick or instant)

1 cup flour

1 cup desiccated coconut

1 cup sugar

4 teaspoons honey

½ cup butter

2 TB boiling water

1 tsp baking soda.

Mix dry ingredients.

Melt butter and honey together and stir.

Add boiling water to soda, stir until dissolved, then stir into butter mixture.

Add the wet ingredients to the dry and stir well.

Drop on parchment lined sheets (do not crowd) and bake 12-14 minutes at 325, or until firm and brown.

Let cool on sheets about 3 minutes, then finish cooling on racks. Makes 2+ dozen.
