ANYONE HAVE THAT RECIPE FOR BIG COOKIE??

I can't for the life of me find it.  You mixed it stovetop, melting butter, etc. and then popped it in the oven to finish.

 

It made one big chocolate chip cookie  YUM!

 

Anyone?

Dark Chocolate Skillet Chocolate Chip Cookie

INGREDIENTS
  • 1 stick (8 tablespoons) unsalted butter
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 egg, beaten
  • 1 and ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 cup chocolate dark choocolate chunks
 
INSTRUCTIONS
  1. Preheat oven to 350 degrees (F).
  2. In an 8-inch cast iron skillet, melt 1 stick of butter over medium heat.
  3. When butter is melted, add the granulated sugar and brown sugar, and stir to combine. Remove from heat and allow to sit for 5 minutes.
  4. Beat the egg, and add a small amount (about ¼ cup or so) of the melted sugar and butter to the egg mixture (to temper it) and whisk to combine.
  5. Pour egg mixture back into the skillet, and stir until completely combined.
  6. Add the flour, baking soda and salt. Using a wooden spoon, carefully stir to completely incorporate the dry ingredients.
  7. Add vanilla and chocolate, and stir to combine.
  8. Bake in preheated oven for 15-20 minutes or until edges are golden brown.
  9. Serve warm.
  10. Enjoy!

Oatmeal Raisin Skillet Cookie

 

Oatmeal Raisin Skillet Cookie

½ cup (1 stick) unsalted butter

1 cup brown sugar, packed

½ teaspoon maple extract (I used 1 teaspoon maple syrup)

1 egg

½ teaspoon baking soda

½ teaspoon kosher salt

½ teaspoon cinnamon

1 1/4 cups all-purpose flour

½ cup old fashioned oatmeal

½ cup raisins

½ cup walnuts, toasted

Toppings (optional):

Raw Sugar

Greek Yogurt (or your favorite kind)

 

Preheat oven to 375º.

Heat a cast iron skillet over medium heat. Melt the butter and stir frequently until the butter browns. Stir in the brown sugar and maple extract. Remove from the heat and let cool for about 8 minutes. (You want the pan to be warm.)

Crack an egg into the skillet and whisk into the mixture. (This is why you want the pan to be warm. If it is too hot, the egg will scramble. Not a Good Thing.) Add the cinnamon, salt and baking soda and stir until combined. Add the flour to the skillet in small increments and stir slowly until incorporated. Add oatmeal, walnuts, and raisins. Combine. (You'll find using your hands works best for this.)

Pat evenly in skillet. If using, top with raw sugar. Bake in a 375º oven for 14-18 minutes, until just set. Serve warm with yogurt, if desired. (This would be a good, rustic dessert, served warm and topped with vanilla ice cream.)

@house_cat 's version is awesome!  BF makes it for me gluten free and it still works.  Just sayin'.

I am not the baker of the house, but I checked with BF, and the only thing he does differently is to sub the regular flour for GF flour.  

He made it also one time when we didn't have enough butter and used coconut oil.

 It will start to harden after you take it out, and when it's cooler it's easier to cut as a slice (instead of crumbles), so don't be impatient and cut into it too early.

This is what I requested as my birthday dessert. Cat Very Happy

I made it only once and DH went nuts over it.
