ANY LOW CARB HOLIDAY DISHES?

The holidays seem to manifest all sorts of high fat, high carb, high calories dishes ... all of them delicious and traditional, but not really "healthy" by any stretch of the imagination.  

 

I'm gravitating back to Low Carb and can quickly whip up appropriate meals for every day activities.

 

However .... I just realized that I may be entertaining and would LOVE some recipes more festive or holiday-ish that keep low carb in mind.

 

Both Keto and Low Carb holiday recipes welcome.

 

What can you share with us?

I would love to hear about some too... I know that cheesecake can be made with a low carb recipe and I'm sure many others can as well.

I'm trying to post one of my favorite recipes, smashed brussells sproutss butkeepgettingan error . . . going to try just one more time.  

 

This is one of may favorite veggie dishes to make!

 

Smashed Brussels Sprouts

 

This delicious Brussels sprouts recipe will make a Brussels sprouts believer out of anyone.

 Ingredients
  • 2 pounds Brussels sprouts, washed and cleaned

  • ¼ cup extra-virgin olive oil

  • sea salt and freshly cracked black pepper to taste

  • 1 teaspoon red pepper flakes

  • 1 cup finely grated Pecorino Romano cheese

  • ½ medium lemon

Directions

  1. Bring a large pot of cold water to a boil. Add Brussels sprouts and cook until softened, 7 to 9 minutes, depending on size. Strain and transfer to an ice bath to stop cooking.

  2. Preheat the oven to 425 degrees F (220 degrees C).

  3. Strain cooled sprouts and spread onto paper towels to dry. Pat the tops dry as well.

  4. Transfer sprouts to a large baking sheet and smash with the bottom of a Mason jar. Pat dry with a paper towel to soak up any additional liquid. Drizzle with olive oil and sprinkle generously with sea salt and pepper. Sprinkle pepper flakes over the top, then shake the tray a bit to distribute the oil and spices.

  5. Bake in the preheated oven for 15 minutes. Gently flip sprouts and sprinkle with Pecorino Romano cheese. Return to the oven and bake until sprouts are soft and cheese is melted, 10 to 15 more minutes.

  6. Remove from the oven and place the baking sheet onto a wire cooling rack. Squeeze lemon over top, then transfer sprouts to a serving plate.

With Type 2 Diabetes but off meds due to diet changes I bought  a book Titled "Easy Low Carb Cookbook" by Wendy Polisi. I bought it from Amazon and it has lots of recipes including breakfast, lunch, dinner and desserts. Some have a net carb of 5 per serving ( Cheesecake Bites) yum !.  Hope that helps

Cheesecake and chocolate mousse were my favorites.  I especially liked a key lime version of cheesecake.  I would scoop out a portion and skip making a crust.

 

I have been thinking of making these desserts again.  I am low carb, too, but struggling lately.

Not a one--T-day is carb day for me--all the traditional dishes made with all the traditional ingredients!!

Deseeded and sliced acorn squash roasted with a mixture of softened butter salt cayenne pepper and sugar-free maple syrup slathered on it. Delicious.

Also the typical broccoli salad made with blanched broccoli red onion sunflower seeds bacon and in the dressing made with mayo salt red wine vinegar and Splenda instead of regular sugar. My guests never knew.

 

Please excuse the lack of punctuation as I am typing this using text voice. I'm working with a broken shoulder and I find it hard to type on my tablet anything of any length so I'm trying this. Thank you

ACK!  Are you needing a shoulder replacement, @LizzieInSRQ?  I fell twice, shattering my humerus bones, both R and L.  Very painful.
