You can tell I love mushrooms. I've saved a big bunch of recipes for them over the years. You all might already know this one---it's fairly common.
SHERRIED MUSHROOMS ("a smashing substitute for rice or potatoes")
4 to 6 Pepperidge Farm patty shells, thawed
1 pound mushrooms, sliced
Butter
1-1/2 cups sour cream
3/4 cup grated Parmesan cheese
3 tablespoons sherry
Dash of garlic powder
Parsley or watercress for garnish
Heat patty shells per package directions.
Saute mushrooms briefly in butter
Add sour cream, Parmesan, sherry and garlic powder and cook over low heat until warmed through.
Serve in patty shells with garnish as desired

Thanks so much for sharing the recipe. It sounds delicious and I will definitely make it. Would be an elegant thing to plate next to some beef tenderloin.

@novamc1 are patty shells like puff pastry shells and if so do you find them in the frozen section?

Yes,mtc..I remember my mom used to use them a lot and my " job" as a kid, was pulling out the center piece, which of course, I got to eat!

Oh THOSE are the patty shells . . . I know what those are, thank you (and just think I get to eat the middle!) . . . ![]()

Growing up,we called those vol au vents. They are delicious! Sometimes we added some chopped chicken in with the mushrooms for a heartier meal with a salad.

@Lynneuk I just saw a recipe yesterday in an old cookbook for vol au vents -- first time I ever heard of them was on an episode of "As Time Goes By" -- the one where "Penny's" surprise anniversary party is being held in a tent.
