ALMOND JOY POKE CAKE - From The Recipe Critic

Oh my ... this is going on my to bake list very soon. I may use the cake mix or make my regular chocolate cake and the icing looks like what I make anyway. Can't wait to try this poke cake.

 

ALMOND JOY POKE CAKE - From The Recipe Critic

INGREDIENTS
1 15.25 oz. box Devil's Food Cake Mix
Ingredients on the box to make cake eggs, oil, water
1 14 oz. can sweetened condensed milk or 1 (15 oz.) can cream of coconut
2 c. shredded coconut
3/4 c. sliced almonds
Chocolate Icing
4 Tbl. unsalted butter
4 Tbl. unsweetened cocoa powder
2 c. powdered sugar
1 1/2 tsp. vanilla extract
3 Tbl. milk

 

INSTRUCTIONS
Prepare cake mix and bake according to package directions for a 9x13-inch cake.

 

When cake is done, while it is still warm, poke holes all over the cake using a toothpick or a fork.

 

Stir together sweetened condensed milk or cream of coconut and the shredded coconut and pour/spread over the warm cake. It will be thick.

 

Allow to cool. Some of the mixture will sink down into the holes in the cake. When cake is cool, make the chocolate icing.


For the Chocolate Icing: Melt butter in a medium sauce pan over medium heat. Stir in the cocoa powder until no lumps remain. Remove from heat and stir in the powdered sugar, vanilla and milk.

 

Stir together until smooth and creamy and immediately pour over the cooled cake. Spread out evenly.

 

Top with sliced almonds and allow icing to harden. I like to refrigerate the cake overnight, so it's nice and firm and easier to cut into slices.

I am addicted to coconut.  That recipe looks delicious.

 

I am going to try to make it gluten free. I have all of the ingredients on hand.  Yummy

That looks fantastic.  I had to see if I could find a keto/low carb version, and I found one!  Now to decide when I can fit it in my menu plan.

I have a question, please, for @kate2357 or @walker, as you both posted recipes for poke cakes. Smiley Happy

This one for an Almond Joy cake, and @walker's for a Butterfinger cake.

 

I've never made one, because all I can picture is a pan of mushy cake!

I must be wrong, though, since they've been popular for quite some time.

 

Can either of you please describe the texture of the poked cake?   Smiley Very Happy

I found you can control the moisture by not poking all the way down and not poking a zillion holes. Also helps to chill over night to firm it up. BUT it is a moist cake and if not careful you end up with a tres leche kind of cake...which I do not care for.
