Tonight I made Lavendersage's recipe for zucchini and corn fritters and if you haven't at least copied the recipe, you should. They were absolutely delicious. Anyway, you need to really squeeze the shredded zucchini to get it dry. I use a potato ricer to squeeze the juice out of frozen chopped spinach and it worked just as well for the zucchini. I make spinach dip quite often and will be making the fritters as often as I dare (we ate the whole batch). This gadget is a real time, mess, and paper towel saver. I've only used it a couple of times for potatoes, but it's worth it to me just for the spinach and zucchini. It only costs around $20. Just thought I'd pass this along while it was on my mind in case you dislike the squeezing job as much as I do.
