whatever you do, DON'T use my recipe for roast beef in a crockpot. it came out like shoe leather.

Red Top--I didn't use any liquid. I usually feel like the meat has been boiled because of all the liquid that comes out of the meat. I may try again the next time roast beef is on sale.

 

Go ahead, call me dumb. It's a good thing my husband is such a good cook--and he really is.

@GoneButNotForgotten Try putting some kind of liquid such as broth to prevent that.  Any crockpot and slow cooker I had all said to use liquid to cook meat.  I also cut slits in meat and add small pieces of butter to keep moist while cooking.

I know that this is an unpopular opinion, but it's mine.

Meat is more delicious when either cooked on top of the stove, or in it, period.

Crock pots are great for keeping something warm on a buffet, etc. but that's about it.

@GoneButNotForgotten I have seared beef on the stove in a little oil to brown it, then placed it in a crockpot with onions, celery and potatoes.  I add about a cup or two of liquid (broth or water) and let it cook away with the lid on.

 

It comes out moist.

 

I am sorry your roast didn't turn out well.  You can always try again. Don't give up.

I don't understand cooking a roast beef in a crockpot unless you want it well done and cooked to death and use a poor cut of meat that is not a roast beef.

 

It's a roast,,,,,,,,,,a good cut of beef, roast in the oven, salt, pepper and onion...............delicious Saturday night or Sunday dinner!

So sorry, but that sounds like a first time cooking a roast mistake.  I cook stovetop, oven and instant pot, and all roasts have to have liquid to tenderize the tough muscle fibers in the meat as they cook.

A roast in the crockpot needs some liquid and needs to be cooked low and slow.

Troubleshooting:

Did you cook it on low? That will produce more tenderness

Did you cook it long enough? That is key

Did you add any liquid at all? Always needs liquid of some type....doesn't have to be a large amount, but it is required

 

Low and slow....with some liquid. i usually add a pkg of dry onion soup mix and 2/3 cup water; more if adding lots of carrots or other vegs.

 

Try again...bet your next roast beef will be delicious.
