A lasagna compromise...lasagna roll-ups.

I don't like lasagna, because I'm not a fan of all the cheese.  My husband and son love it and asked for it this weekend.  

 

As a compromise, I made a modified version of the lasagna rolls that were in the Taste of Home cookbooks I recently purchased.  They turned out wonderfully, and I will be making them again.

 

Here's my modified recipe. I used a homemade tomato sauce I had in the freezer, but of course you can used jarred sauce.

Lasagna Roll-Ups

 

12 lasagna noodles - par cooked just until flexible

16 ounces ricotta cheese

1 pound ground beef

2 - 3 cups shredded mozzarella

1/2 cup grated Parmesan cheese

tomato sauce - about 3 cups

 

 

  • Brown the ground beef and add it to the sauce.
  • Spray a 9x13 baking pan with cooking spray.
  • Spread some of the sauce over the bottom of the pan.
  • Par cook the noodles, just until soft enough to roll without cracking them. 
  • Lay each noodle out flat and sprinkle lightly with Parmesan cheese and mozzarella. 
  • Spoon on intervals of ricotta cheese and meat sauce.
  • Roll lightly and place in baking pan, seam side down.
  • Add remaining sauce to pan, along with remaining mozzarella and any remaining Parmesan cheese.
  • Cover loosely with foil and bake 45 min. at 350°
  • Remove foil and bake an additional 15 min.
  • Let cool about 10 minutes before serving.

house_cat.....my family does not care for lasagna either due to all the cheese, but I like it.  I think I will try this recipe sometime and see what they think.  Thanks.

I make lasagna roll-ups with a filling ricotta, some parmesan, and spinach, and my homemade marinara sauce.

I think I found it online. Here's the recipe. Hope you enjoy it!!!

 

Spinach Lasagna Rolls  

 

Ingredients:

  • 2 cups homemade marinara sauce plus more for serving
  • 9 uncooked lasagna noodles, wheat or gluten-free
  • 10 oz package frozen chopped spinach, thawed and squeezed well
  • 15 oz part skim ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • kosher salt and fresh pepper
  • 9 tbsp (about 3 oz) mozzarella cheese, shredded

Directions:

  1. Preheat oven to 350°F. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.
  2. Cook noodles according to package directions, then drain.
  3. Combine spinach, ricotta, Parmesan, egg, ½ teaspoon salt and black pepper in a medium bowl and mix.
  4. Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.
  5. Ladle remaining sauce over the noodles and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts. Makes 9 rolls.
  6. To serve, ladle a little sauce on the plate and top with the lasagna roll.
