Don't do a big Thanksgiving dinner anymore, but the following helped me out "back in the day" and thought I'd share.
Slow cooker bread dressing - https://www.allrecipes.com/recipe/13571/slow-cooker-stuffing/
Note 1: Add maybe 1/2 the broth at beginning, then add as needed.
Note 2: This also has instructions for baking in oven.
Make ahead gravy: https://www.food.com/recipe/the-best-do-ahead-turkey-gravy-42402?ic1=suggestedAsset%7Cbest%20%28do-a...
Turkey Brine: https://www.allrecipes.com/recipe/54614/turkey-brine/

@denisemb Thank you for posting these timely recipes. I especially appreciate the one for make ahead gravy. Can never have enough and by fixing in advance it is one less thing to worry about on the day itself!

Thanks for sharing. I have had to do "creative cooking" since moving into this house almost 16 years ago. I only have 2 burners on my cooktop that work. Since we usually end up making an obscene amount of turkeys for Thanksgiving between cooking for church, one of our neighbors, and of course our own turkey for family dinner, I usually make Chef John's Make Ahead gravy from All Recipes. https://www.allrecipes.com/recipe/230049/chef-johns-make-ahead-turkey-gravy/
I also measure out flour and ingredients to make homemade sweet potato crescent rolls and place in zip lock bags. I bake my cornbread early and freeze for our dressing. I try to do as much of my "mise en place" as early as possible and place in labeled ziplock bags. It just makes everything flow smoother on Thanksgiving Day. Kind of like making up my own food delivery plan ahead of time.

Use your crock pot (if you have one)! You can fix make ahead mashed potatoes. Fix your own recipe day ahead.....reheat with little extra butter and milk on day of meal. Or, look up make-ahead recipes. I have one if interested. Crock pots are so handy!

Thank you so much. I am not "miles ahead" of anyone. I just learned to adapt to the situation. I hope you and yours have a wonderful holiday season as well.

You are so right about crock pots. Don't know how my grandmothers functioned without them!

I almost got rid of my old oval crock pot after we bought our Ninja (non-stick metal container that browns). Glad I didn't - some things just come out better in the crockery container at the low heat level. The Ninja is wonderful, but the low setting seems to run a little hot.
