@deepwaterdotter, classic New England Clam Chowder uses salt pork, and the fat is used to saute the veg.
I don't like the flavor of salt pork at all, so use bacon and its fat.

BTW, @deepwaterdotter, I didn't mean to step on your toes in any way. I just love chowder!

Upthread I said "I think I'll try it on Wednesday and will let you know on here how it turns out ".
I also mentioned Amazon had the Bar Harbor clam juice you had recommended.
Well it looks like it might not be Wednesday after all - I just received a delay notice from Amazon:
Hmmm...what do you want to bet that the bottle of clam juice got smashed and they caught it before delivery LOL.
It reminds me of the time I bought a couple jars of Bavarian sauerkraut from The Vermont Country Store and they sent it via USPS in a (unpadded) Priority envelope. They were smashed to smithereens, and OMG the smell. Whew, I felt so sorry for the postman driving that around in the FL heat to deliver those broken jars of stinky sauerkraut to my address. It took my poor mailbox a good month to lose that wonderful aroma!
I doubt clam juice could smell any worse LOL.

I just finished making this recipe and it is FABULOUS!
It is very thick. What would you recommend to thin it out, more chicken broth or just plain water?
