5 Ingredient Pesto Chicken Soup

I love a 'simmer all day, twenty ingredient soup' sometimes. However, It really doesn't get quicker, easier or tastier than this. If you've got 10 minutes you've got a great 'chicken soup for the soul'. Enjoy!
4 cups good-quality chicken stock
3 handfuls (about 3 cups) fresh spinach
2 cups shredded cooked chicken
2 (14 ounce) cans Great Northern or cannellini beans, rinsed and drained
1/3 cup pesto (homemade or store bought)
(optional topping: grated Parmesan cheese)
Stir together chicken stock, spinach, chicken, beans in a medium saucepan. Cook over high heat until the soup reaches a simmer. Then reduce heat to medium, stir in the pesto, and let the soup continue to simmer for 2 minutes. Serve warm, topped with Parmesan cheese if desired.

This sounds like a great use for Costco rotisserie chicken and the home made chicken stock I make out of their carcases. Thanks for posting - it getting to be soup weather here in the PNW.

Thanks so much for this recipe, LoLa.! I made it tonight. I had chicken stock that I made from a few days ago. (I highly recommend Ina Garten's 40 garlic chicken recipe that I got from my friend, Mary. She actually gave me all the garlic, she gets it from Costco.)
This was so easy and I love the flavor profile. Hubby gave it a thumbs up! Served it in a big shallow bowl with grilled garlic sourdough bread. This is a recipe that will go on my short list.

This soup is a keeper, for sure! It is really an awesome recipe and heary enough for a meal. I made a slight change, using vegetable broth instead of chicken broth. I also added a dollop of low-fat sour cream to the top before serving since parmesan cheese is too salty for me. Thanks for posting it!

Lola, yours is similar in ingredients to the one I posted not long ago and I read to my husband, and I copied yours. I'll try yours next time, since he'd be happy with more beans. (Musical fruit). LOL Now that I see how we like spinach in this soup and these ingredient combos, this soup will make for happy tummies. Momma's happy.

Made this tonight with leftover rotisserie chix from Costco and homemade chicken stock. Due to the simple nature of this soup, I highly recommend making your own chicken stock. While eating the soup this evening, one of the things I really enjoyed was the taste of the stock. So many times when stock is thrown into a recipe the essence of it nearly disappears. Not so here. This recipe is so good on several levels. Thanks, LoLa, for another winner.
