300 calorie Jumbo Raisin Bran Muffins

Reduced Sugar, Low Fat, Still Yummy Jumbo Raisin Bran Muffins

1 1/4 cups all purpose flour

1/2 cup sugar

1 tbs. baking powder

1/4 tsp. salt

1 1/2 cups Original All Bran cereal

1 1/4 cups milk

1 egg, slightly beaten

1 single size serving container of applesauce

4 oz. raisins

Put the All Bran into a mixing bowl with the milk, egg and applesauce. Let it soak for about five minutes while you prepare the dry ingredients.

In a separate bowl, mix together the dry ingredients, except for the raisins, which will be blended in last.

Mix the wet and dry ingredients together a little at a time, being careful not to over stir, as this makes muffins tough.

Fold in the raisins.

Fill six jumbo sized, greased muffin pans and bake about 25-30 minutes at 400 degrees until muffins are golden brown and crusty on top.

Let cool on a wire rack.

Each muffin is approximately 300 calories.

*If you are interested, you can make a vegan version of this using soy or almond milk and egg substitute. It works well.
