Hello RS Friends!
Does anyone remember this recipe I found here and can fill in the blanks for me! With immense thanks and gratitude as always.
3-C Cookies
1/2 cup butter
2/3 cup brown sugar (1/2c?)
1/2 cup white sugar (1/4c?)
1/2 tsp ???????
1 egg
1 egg yolk
2 tsp vanilla
1 1/2 cup flour
2 cups coconut
1 cup cashews
1 cup white chips

This is the recipe I got here:
Three C Cookies
Yield: 2-1/2 dozen
1-1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1/4 cup sugar
1/2 cup packed brown sugar
1 egg, plus 1 egg yolk
2 teaspoons vanilla extract
2 cups flaked coconut
1 cup coarsely-chopped cashews
1 cup white chocolate chips
Preheat oven to 325 F. Generously grease baking sheets. Set aside.
In a medium bowl, whisk together flour, baking soda and salt. Set aside.
In a large mixing bowl, with electric mixer, beat together butter, sugar and brown sugar until smooth and creamy.
Add egg and egg yolk, beating well.
Mix in vanilla extract.
Gradually add flour mixture, beating well.
Stir in flaked coconut, chopped cashews & white chocolate chips, mixing well.
Drop batter by rounded Tablespoonfuls, 2 inches apart, onto greased baking sheets.
Bake at 325 F for 12 - 13 minutes or until golden. Remove from oven and set aside to cool for 2 minutes. Remove cookies from baking sheets to wire racks to cool completely.
