@beach-mom   Those French green lentils are delicious, but wow, are they expensive.

 

I bought them once.  I recently got some lentils that are less than $2 one pound a bag.  I didn't try them yet, but I hope they  are just as good

@Carmie - I bought Goya French lentils at our local independent supermarket. A one-pound package was $1.99.

Am a huge soup lover--could eat soup most days of the week. I tried a white bean soup and as one of its ingredients was kale---which I do like--but it was not good in the soup. Kale needs to be cooked for longer than the recipe suggested and then I got chopped kale instead of loose in a bunch-- where I would strip the leaves off the stem---so it had chopped stems too. So we picked around the kale--- should have used spinach---I use kale in my smoothies so won't waste the bag--will freeze it.

@beach-mom ..... good thread you started for soup, thank you.  I told myself I would try to fix more soups this winter.  Perfect timing to find new recipes here.  If you haven't already checked out the January Recipe Game, there are a couple of good recipes there.  One is mine for a corn, potato, chicken soup.  Another by @house_cat is an Olive Garden recipe....VERY GOOD!  (Or go to Olive Garden and try it there...😁).

@beach-mom  I have been making soups forever.  It's a staple in my house, that and my Curtis Stone bread machine.   Anyway I just wanted to share that I recently picked up a Taste of Home Soups and Stews cookbook on Amazon.  So far I love it as it has some different recipes than I've made in the past.  Lot's of easy ones, good tips and some with crockpot options.   Enjoy!

@beach-mom  I'm glad I inspired you to create this thread.  So, I'll just have to add another EASY (and I mean EASY) soup recipe.  For all that enjoy a good creamy tomato basil soup, you'll not find an easier one than this one using PASTA SAUCE! 

 

Tomato Basil Soup 

 

 4 INGREDIENT CREAMY TOMATO BASIL SOUP using jarred Pasta Sauce!

 

This recipe makes about 2 hearty servings, so if you need it for 4 people, then double the recipe.  

 

This soup requires only 4 ingredients (not counting the water) and is every bit as delicious as restaurant quality.  Best thing is it takes only about 15 minutes from beginning to end.   

 

  • 1/2 cup fresh basil minced  (fresh basil is really what makes this soup so good.  If you don’t have fresh basil, you can try using dried basil but fresh basil is best and highly recommended)
  • 1 tablespoon butter
  • 24 ounces pasta sauce ( Rao's Tomato Basil or Marinara are my favorite)
  • 2 cups water
  • 1/2 cup heavy cream (this is something you can’t substitute)   Please use the heavy cream for a rich creamy, silky  tomato soup.  If you try and substitute milk or half & half, it's not the same texture or flavor.  
  • Cook basil: Heat a medium saucepan over medium heat. Sauté chopped 1/2 cup fresh basil in 1 tablespoon butter until fragrant, about one minute.
  •  
  •  Add the entire jar (roughly 24 ounces) of pasta sauce and the 2 cups water. Increase heat to medium-high and cook until heated through, about 5-7 minutes
  • .
  • Stir in cream: Remove the pan from the heat and stir in the 1/2 cup heavy cream. To serve, top with fresh basil and freshly ground pepper, if desired. 
  •   *Add a grilled cheese sandwich to eat with this soup and you’re in heaven!

for me, it is usually sundays to make soup.

i had a lot of chinese white rice leftover.

i decided to make chicken and rice soup.

 

i love when i have all of the ingredients already. we will eat some, i will give some away, and i will freeze some in individual containers. my brother and sister love my soups so they request them at christmas as their christmas gift that lasts all year long.

 

chicken breasts simmered

chicken broth/stock/better than bouillon

butter and/or bacon grease

onion

celery

carrots

parsley

saffron

lemon

rice

salt

pepper

garlic

Soups are great because you can add or delete ingredients based on your preferences. @LindaSal, I often get Taste of Home cookbooks from the library. They are favorites, along with those from Gooseberry Patch.
