18.25 Ounce Boxed Cake Mix Adjustment AND RUM CAKE RECIPE... (RESPECTLIFE, PLEASE READ)

Hi friends. As most of you know I was gone for awhile. Someone else may have already posted what I am about to post. If so, my apologies . Most of my recipes date back as far as who knows when. Respectlife was looking for a recipe for Rum Cake. I have a good recipe which I shall post ...

BUT   PLEASE  NOTE!!   The recipe I will post is an old recipe that calls for the 18.25 ounce size box.  They now make the cake mixes in 15.25 ounce boxes.Therefore alot of my recipes that use cake mixes are outdated because of the ounce difference. BUT....HERE IS A SOLUTION!

 I make the following  for the ounce adjustment.

Once I make it, I put it in a clear glass jar with a tight fitting lid.

 

MIX THE FOLLOWING INGREDIENTS TOGETHER  AND STORE IN A AIR TIGHT JAR*****************************

 

CAKE MIX INCREASER RECIPE:

1  1/2 cups ALL PURPOSE flour

1 cup sugar

2 teaspoons baking powder

1/4 teaspoon baking soda

 

If you are using a recipe that calls for a 18.25 ounce cake mix, and all you can find is a 15.25 ounce box cake mix, Just add 3 ounces

(6 T ABLESPOONS)  of the above recipe for CAKE MIX INCREASER to a 15.25 ounce box of cake mix.

I have done this for many recipes and it turns out just fine.

My memory isn't like it used to be, so i wrote the CAKE MIX INCREASER recipe on a index card and taped it on the jar so I could make more when the jar is empty, instead of having my kitchen look like a tornado struck it as i look for the increaser recipe . (LOL saves me ALOT of  frustration)Woman Wink

 

NOW FOR THE CAKE RECIPE!!!! 

 

 

Rum Cake:

1 cup chopped Pecans

 

1 (18.25 ounce ) box yellow cake mix..IF USING 15.25 ounce box of mix, add  6 Tablespoons of the cake mix increaser.

 

1  ( 3  1/2 ounce) box Vanilla Pudding

4 eggs

1/2 cup cold water

1/2 cup oil

1/2 cup Dark Rum

 

Preheat oven to 325*. Grease and flour a 10 inch tube pan or a 12 cup bunt pan. 

Sprinkle chopped pecans in the bottom of the pan. Mix cake ingredients together. Pour over chopped nuts. Bake 1 hour. Cool.  Make Glaze.

 

Glaze:

1/4 pound butter

1/4 cup sugar

1/4 cup water

1/2 cup Dark Rum

 

Cook the butter, sugar and water for 5 minutes. Remove from heat.

Add Rum.

Using a fork, make small holes in the cake and drizzle the glaze over the cake, a little at a time to allow the glaze to absorb into the cake. Repeat until the glaze is used up.

I love rum cake ... I need to make one soon.  The box kind are okay - but I really prefer the homemade cake.

Thank you so much for the formula to increase the cake mix volume. The grocery store that I use  has a store brand that is the old size, but this will allow me to use the mix I want. Thank you again, I have many recipes that call for a cake mix.

Oh, this was my absolute FAVORITE.. It was my job to chop the nuts for my mom- (Before Food processor!)she swore the alcohol cooked out.. but i never thought so!

indoor kitty...Hi there. You are very welcome Woman Happy  This sure beats buying 2 boxes of cake mix to adjust the difference. Like you, most all my recipes are family recipes and when it calls for cake mix its for the bigger size they made smaller. This does the trick Woman Happy

Thanks @LilBitMissty.  When you posted the other rum cake recipe, I thought to myself, "I bet this is a lady who has a great rum cake recipe without all the sampling."

Thank you for thinking of me and posting a rum cake recipe!  I remember a poster a while back always said she had the best Rum Cake...but would never share the recipe!  LOL

Since I made the 'other' rum cake last night...I will have to go buy more rum now!

 

LOL,  Just kidding....but I WAS thinking about making that one last night!   tee hee!
