I'm on a 1200 calorie diet and I love playing with ingredients that I have on hand. This is what I came up with today and they're good. If you like really sweet treats, you won't like them, but I don't, so I'm happy with a cupcake size muffin for 100 calories.
Vegan Blueberry Muffins
2 cups Bisquick
2/3 cup soy milk (approximately)
4 oz. canned pineapple (pureed)
vegan egg substitute (equiv. of one egg)
1 cup blueberries
Mix the first four ingredients in a bowl, being careful not to overmix. Muffin batter should be lumpy. Fold in the blueberries. Add batter to cupcake pan that has been lined with cupcake papers. I only had enough batter for 10 muffins because I like them to puff up tall. You can sprinkle the tops lightly with cinamon sugar if you'd like. Bake at 375 degrees for about 25-30 minutes, until tops are golden brown. Cool on wire rack. If my calculations are correct, each muffin has about 100 calories, if you get 12 out of the batter.
