10 Minute Microwave PUMPKIN FUDGE

While browsing some fall recipes sites yesterday, I came across this delicious looking EASY microwave pumpkin fudge recipe.  It looks delicious!  This will definitely be one of my first fall recipes.   The recipe says 4 ingredient, but I count 6.  Notice the remaining spice ingredients are located below the picture.

 

 
  • 12 oz white chocolate chips
  • 1/3 cup pumpkin, canned
  • 1/2 tsp pumpkin pie spice
  • 5 tbsp coconut oilpumpkin-fudge.jpg
  • 1/2 tsp allspice
  • 1/4 tsp nutmeg
Instructions
  • Melt chocolate chips and coconut oil in microwave in 30 sec. intervals at 50% power stirring in between, should take about 4-5 rounds until it is smooth without any chunks. 
  • Add pumpkin and spices and stir until combined well.
  • Put a piece of parchment paper inside a loaf pan and spoon pumpkin fudge mixture inside. Smooth so it is evenly distributed in the pan.
  • Put in the freezer for 1 hour, serve!
  • Keep in fridge if there are leftovers.

a site devoted to recipes that only

require using the microwave?

@ciao_bella   Thank you for posting!  I've been looking for a good pumpkin fudge recipe for many years.  The last one had Jello pumpkin pudding mix in it (very hard to find) and it was awful.  Thank you again, I will certainly give this one a try!

No sugar?  Never heard of fudge without sugar.

@beastielove   The website I got this recipe from is called:  The Typical Mom.  She has other easy, delicious fudge recipes as well as many different other types of food recipes.   I'm not sure if we are allowed to post the web address on this forum or I would have.  If you Google The Typical Mom recipes, I'm sure it will come up.  

 

@Kachina624   I didn't try this recipe yet, but I think the sugar for this recipe comes from the white chocolate.   White chocolate is quite sweet.

Here's our family's favorite microwave pumpkin fudge, in case anyone is interested:

 

Pumpkin Fudge

 

3/4 C butter (no substitutions)
3 C sugar
2/3 C evaporated milk
1/2 C Libby’s solid pack pumpkin
1 12-oz package white chocolate chips
7 oz marshmallow creme*
1 tsp pumpkin pie spice
1 tsp vanilla

 

Lightly grease a 9x13" pan; set aside. Put butter in a large microwave-safe bowl and heat on high until melted, about 1 minute. Stir in the sugar, evaporated milk, and pumpkin until well combined. Microwave on high for 12 1/2 minutes, carefully stirring at the 10:00, 7:30, 5:00, and 2:30 marks. Add white chocolate chips and fold in until melted. Stir in marshmallow creme, pie spice, and vanilla until well blended. Quickly pour mixture into the prepared pan, spreading into an even layer. Cool at room temperature for half an hour before transferring to the refrigerator to set completely. Cut into squares and serve. Store any leftovers covered in the refrigerator.

 

*Definitely track down the creme for this recipe; marshmallows don't work as well.

The BEST Pumpkin Fudge I've ever had is from the Murray Hotel on

Mackinac Island .

 

They let you sample any flavors before you buy.

 

If you get there early they have disccounted prices.

 

Of all of the many many fudge and candy shops on the Island and

in the city,  my family always navigates toward this one and we have

purchased from all of them.

 

I've never thought of making my own pumpkin fudge, but I may try it.
