I'm not a cook to say the least, but back in the day my meatloaf is the only one my dad would eat. I just used ground beef and like you onion and green pepper. Instead of bread crumbs I used quick oats, egg, a little milk, brown or yellow mustard and ketchup. I think that was all.

I always make The Store Meatloaf but I don't how to link it here.  It has 1/4 chili sauce in with the meat and is topped with chili sauce and 4 slices of bacon before baking.  You can Google the recipe.  It is full of flavor!

I always made Ann Landers recipe for meatloaf:

Ingredients

2 pounds ground beef
1 egg
1 1/2 cup bread crumbs
3/4 cup ketchup
1 teaspoon Accent® seasoning mix
1/2 cup warm water
1 package dry onion soup mix
2 slices bacon
1 can (8 ounce size) tomato sauce

directions

Mix together all ingredients except bacon and tomato sauce. Mix very well. Form into a loaf and put into a bread loaf pan. Cover with bacon and pour tomato sauce over loaf.

Bake on the middle level of a preheated 350 degrees F oven for one hour.

I have made this meatloaf many times in the past. My family LOVES it. Good enough to serve to company! https://louisiana.kitchenandculture.com/recipes/chef-pauls-meat-loaf

I do not use the pepper sauce.

Time consuming, but worth it!

I also really like The Barefoot Contessa's turkey meatloaf. I'm sure you could make it with regular meatloaf mix if you prefer

this is very similar to my recipe, but i use milk instead of water, sometimes white bread instead of bread crumbs, AND i prefer a brown gravy instead of a tomato based sauce.

Accent has MSG, some people may be sensitive to that.

This is my grandmother's recipe and it is the best meatloaf I have ever had. It is great in sandwiches as well and does not require additional seasoning or catsup.

COMBINE:

1 lb ground beef

1 egg

1/2 C chile sauce

1t worchester sauce

1t salt

1 large onion (diced)

10 crackers (crushed) - I use Ritz crackers

FORM INTO LOAF

CRUSH 3 MORE CRACKERS AND SPRINKLE ON TOP OF LOAF

CUT 2 SLICES OF BACON IN HALF AND PLACE ON TOP OF LOAF

BAKE @ 350 FOR 1 HOUR

Enjoy!Smiley Happy
