My nephew went on mission with his church to Haiti. And he did as another poster stated "grunt work", whatever was needed.
It is commendable to answer the call to service.

There's nothing wrong with Kerstin letting others know of her plans for missionary work. Everyone I've known, from faith based missions, to doc's and nurse's signing on for Doctor's Without Borders, were thrilled to share their excitement and their experience. I never saw this as attention seeking behavior. I was always anxious to hear all about it. These are people living life to the fullest, which is inspiring.
I hope her mission exceeds all expectations for her and family. But, I've known Mexico since my youth. It's worse than most realize. No one I know wants to go there now, including my Hispanic friends. I know a guy who has family there. Before he crosses the border, he dresses in very dirty clothes, with tears and holes. He wants to fly under the radar.
Some have timeshares in previously higher end locations, but they're not using their time. Those with homes and ranches near the border have started vacating. They're just using sites as vacation homes and, hoping they'll still there when they visit. Locals lock themselves in their homes at nightfall in many locations, out of fear.
My DH grew up in El Paso, so he spoke Spanish, as did his dad, who taught English to the Spanish speaking, after retiring from the military. A skip into Mexico was delightful for them many years ago. Now it's scary. Before my DH passed, he said he would never risk a return. This greatly saddens me. And, I don't see it ever returning to the days of my youth.
So, while I'm happy for Kerstin, I'll also be happy when she returns home safely.

If a retired person or couple want make sacrifices and subject themselves to that kind of lifestyle, that's fine. But there is no way I'd force my children to attend badly substandard schools and subject them to the disease and living conditions in a third world country. They have no idea what they're getting into and no choice about going.
QVC must be very liberal in its leave policies. If they hired her, you'd think they would need her to work.

I sent a text to my mother several years ago and put in an, "LOL." She didn't respond for a few minutes and then asked me if I had just called her a Little Old Lady!
