I have been loving my Curtis Stone sous vide stick. I have mostly used it for steaks and once for hamburgers. My next treat will be some lamb chops. I am going to try that egg recipe, though! Thanks.

@Foolywooly11. They are similar to poached eggs but much lighter and fluffier.  More like an omelet  with a airy consistency if that makes sense.  They're just under 5 dollars at Starbucks and so yummy.  I think Starbucks only uses the egg white.

 

I actually couldn't stop thinking about them after I posted this yesterday so I had them for my breakfast this morning!!

The water makes a gurgling sound which could be annoying.  Doesn't bother me.  Heats up pretty fast.  I'm having fun with it and glad I got it.


wow!  sounds great.

 

The egg dish from Starbucks is so good I was just thinking of getting one for that, however, I see how many other things you can try to make... More tempting (and fun sounding)!

Step 5:

Attach two-part lids and close to fingertip tightness.  This means using only your fingertips to screw on the ring.  If they are too tight, the air pressure within will not be able to release and the jars will shatter on the bath.

 

Step 6:

Once closed, submerge the jars in the water bath and set your timer for 1 hour.

 

Finishing Steps:

 

Step 1:

Remove from the bath and enjoy straight from the jar if desired.  You can also slide a butter knife around the edge, pushing gently inwards as you do so to loosen the base.  Invert jar onto heat-safe surface and e ither sear with a torch or place under a broiler for a few minutes for color.

Just as an FYI there are two favors they have the one I have is with roasted peppers and no bacon but it sounds easy enough to swap out ingredients depending on what people want/ what you have on hand...

Egg Whites and Roasted Red Peppers

 

Ingredients for 6:

  • 6 egg whites

  • 1/4 cup cream cheese

  • 1/2 cup cottage cheese

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 2 T roasted red peppers/pimentos, or a like pepper

  • 2 green onions, green parts only, finely chopped

  • Equipment:  6 four-oz canning jars

Step 1:

Set cooker for 172 F/77.8 C

 

Step 2:

In a blender, combine egg whites, cream cheese, cottage cheese, salt, and pepper and process at a high speed until smooth.

 

Step 3:

Divide the mixture equally among the jars.

 

Step 4:

Add 1 teaspoon of red peppers to each jar.

 

Step 5:

Add equal amounts of green onions to each jar.

 

Step 6:

Stir fillings with a butter knife to spread ingredients.

 

Step 7:

Attach the two-part canning lids using fingertip method.  Do not over-tighten (see other recipe for directions).

 

Step 8:

Submerge jars in heated bath and set timer for 1 hour.

 

Use same finishing steps are previous recipe.

 

The next time that I hear salt and ice together, it better be in a margarita!

I've had mine for over a year, I have the Anova precision cooker, I know how to use it for eggs, but I never have.

We bought one at Williams Sonoma about 6 months ago, didn't pay nearly $200 for it, and we love it!  Wonderful for chicken and salmon especially.  One thing I don't like is steak.  It just doesn't compare to the grilled ones, and I say that even if you grill the outside of the sous vide ones.

 

It is super beause timing doesn't have to be exact, no cleanup, and super healthy.  We buy shrink wrapped salmon, and I get chicken breasts that are in packs of two, so throw it in the pot and voila!
