I have a Wegman's nearby and I see it there. Don't know where you live but ask your grocery store manager. I realize not every town has a store with a huge cheese department. Also, check your local quick stop stores - 7-11 or such.

Curd cheese can be expensive because it doesn't stay fresh too long and has a short shelf life and many stores don't sell it,
You can substitute cottage or ricotta cheese in most recipes if you can't find it at your grocery,

I buy them at my local HyVee, they are in the coolers around the deli meat & cheese dept. I always buy ones produced at a creamery in a small town near us. The store also carries Shullsburg brand, they are a well known Wisconsin cheese maker and have a website where they can be purchased. I love the onion & chives curds from our nearby creamery, Dan & Debbie's Creamery, in Ely IA. They also have a website but haven't check to see if they sell from theirs. Besides eating them plain as a side or snack, they are delicious added to scrambled eggs!

Are you referring to cheese curds?
Usually found in the deli section, brought in fresh from a local dairy making cheese. I have seen them frozen but I don't recommend purchasing these frozen although I have seen at Sam's Club breaded frozen curds ready to fry.

If you belong to Costco, check the refrigerated cheese cooler. I've seen it at my local Costco here in Tucson.

I make Poutine ALL the time.
Yancy's Fancy Cheese from Pembroke, NY makes all kinds of cheese curds.
They are NOT expensive. Comes in an 8 oz bag.
They are sold in the Cheese Shop at Wegman's and Walmart.
It may very well be regional since I live in a border city w/ Canada and the dish is well known here.
I would strongly suggest you do NOT substitute ricotta or cottage cheese. While cottage cheese is a curd, neither are similiar to cheese curds in texture. Cheese curds are solid hunks. Ricotta and cottage and way too wet.
If you can not find curds, I would purchase a chunk (NOT shredded) of mozzarella. Chop it into smaller cubes. Curds are typically odd shaped hunks of cheese.
The point of the cheese in Poutine is to get it to a melting, soft point. You bite into a nice little hunk of gooey cheese. It should not melt down totally like shredded would.
You can also make Poutine using potatoes instead of FF. I also use red potatoes cut in half or quarters. Par boil to almost cooked.
I make a brown gravy often adding white wine and dill (with garlic, S & P etc)
Pour it over the potatoes, toss in the cheese curd chunks and warm in the oven till the cheese hunks are gooey.
