I could have written this also. I love my new oven but don't see a big difference when I use convection versus regular bake so wonder what the difference really is.

I also have a newer oven. When we went shopping I was telling my DH we didn't need anything fancy, just basic will do. As soon as the saleman started talking about the convection feature, DH had to have it. I've yet to use it. LOL
I have no idea what the difference is but I do remember the saleman telling us if you bake, it's supposed to help with even baking and to always use it when baking. I'm not a baker sooooo.

If you have an Air Fryer, it is a mini convection oven.

I agree! I don't get it either. Mine convection oven takes FOREVER to preheat as well. I miss my old one.

A convection oven, I think, employs a hot air method of cooking. A long time ago, when the convection idea was new, my mom & dad got a new oven. It came with a conversion chart because things made in a conversion oven will cook faster than in a regular oven. For someone who has had a regular oven their whole life, it's hard to get used to a convection and retrain your brain be able to think and calculate oven times the way you're used to.

I'm not a baker but i roast chicken in my convection oven and it's fabulous.

Convection is supposed to be faster because there is a fan circulating hot air. I have a Breville Convection oven and find it makes little, if any, difference in cooking time.

I have a counter top convection oven. Yes it does cook faster than a regular oven.

Mine takes longer to heat up too. I now always preheat and then switch over to convection.
Convection ovens create a dry atmosphere allowing meats and vegetables to get browner but remain moist inside. The oven uses a fan and exhaust so it doesn't end up steaming your food instead of roasting.
Also more even cooking because the hot air surrounds the food (because of the fan) as opposed to a regular oven that can have hot spots around the heating element.
