? on How You Season a Turkey

Believe it or not, I don't usually cook turkey on Thanksgiving, but this year, I am. I plan on cutting up an onion, carrot, and celery to put inside the bird while it is cooking. I believe in the past I also put in some fresh rosemary. Besides salt & pepper, anything else?

I'd love to hear how others season their turkey. Thanks!
