why would I ever need this? anyone use this? what will they think of next? two hundred dollars for this bowl?

I haven't bought it, but I want it. I read the manual when it came out and I think it's really useful. Although I already have a proofing box that I use to tempering and holding melted chocolate to temp while I dip.

How warm does it Get? I can see how it would be useful, but $200.00 dollars ?

It can be set from 70 degrees to 220 degrees in 2 degree increments.

I really shouldn't be weighing in on this as I have very little depth in this area but for me I would rather purchase an induction burner as they hold the heat consistently and at a better price than this Kitchenaid offering.

I've seen pro chefs using a set up like this for certain recipes. It's a specialized item for sure, but I'm sure it fills a purpose.
