help with cooking one day and freeze for the week???

hello!!! i love to cook and notice how many people are now talking about cooking all your food one day and then freezing it??? i dont get it can you guys tell me more ??? the sites to go to to get recipes and tips...my mother is having some health problems and when im at work my sister does take out for both of them i can use all the help i can get.. thanx a whole bunch.......
