[Ring A Ling]

I read that fresh homemade peanut butter (i.e. made in the Vitamix) should be stored in the refrigerator and that it only keeps one week.

Do any of you store it at room temp & how does that do ? Must it really be kept chilled ? I don't like eating cold peanut butter.

Also, why does it only last one week ? I realize it doesn't have a ton of preservatives in it like store processed foods, but it is just roasted peanuts (and maybe some honey). What makes it 'go bad' at the end of roughly one week ? Roasted peanuts don't go bad after one week, to my knowledge.
