freezing mashed potatoes

iI just found out mashed potatoes could be frozen who knew? cover a cooky sheet with waxed paper or parchment paper, use an ice cream scoop or large spoon and make individual balls and place on cooky sheet. place sheet in the freezer about 2 hrs until potatoes are frozen wrap balls in plastic wrap and place in freezer bag. one ball is a childs portion and 2 is adult portion. works really well and comes in handy.
