Slow cooking a corned beef can dilute the flavors. I always add extra spices like you do.
Which is why I prefer to make corned beef in my pressure cooker - MUCH tastier. The spices are infused into the meat, which stays much juicier, IMO.

Yes to both. Corned beef is the only thing I make using beer, but I do prefer the flavor when it's made that way.
