my bread sticks are shaped into logs, look fine, but, then they spread into scones ! Wonder what am I doing wrong ? they're rolled into logs, then, when they rise they spread out, taste fine, but, not like the ones at Olive Garden or Fazolli's. Mine are flat and spread out.
Use that premium yeast in the red bag, not cheap stuff. Tried to send a messge to King Arthur, but, after typing it out their was no 'submit' to click on. I do bread, rolls, just fine, but, something goes tricky on sticks ! LOL

@SharkE ......dont they have to be put in a breadstick pan to keep their shape?

Could be the recipe. My Mom used to make them and used a regular cookie sheet. When I made them using a different recipe cuz I couldn't find hers and she had passed away last May, they didn't come out right. She used to twist them.

yeah, they always say just form into logs on any kind of baking sheet when you watch the youtube videos, but, I'll buy a breadstick pan. Either my yeast is to strong or I'm making them to big.
I'll research the pan online. Makes me mad I can make bread, rolls, those **** bread sticks are tricky ! I"m not having that ! LOL

@SharkE. Have you ever tried making bread sticks from a French bread recipe? French bread is so easy to make and I like my bread sticks crusty. I don't know why it wouldn't work, do you?

don't think the trouble is in the recipe, itself, but, in the shaping or the yeast I'm using is to powerful I use that SAF red bag premium stuff and it raises really fast. This recipe I"m using takes 2 envelopes and I notice the other recipe just call for 2 1/4 teaspoons I've been using double that for this recipe that calls for 2 envelopes I doubled it to 4-5 teaspoons.

I've never seen a pan for the little bread sticks, nor have I ever tried to make them. However for a French bread ,I bought from Amazon, a two place baker for 14.99. It has a mesh type metal, is called Chicago bakery, and makes the best bread. My French bread stays in rolls, so sounds like you need to change the recipe., shouldn't be flatening out. Look on google and then compare their recipe with yours.

that link that was sent I managed to get to it before the mods poofed it and he had the best breadstick pan. OUT OF STOCK of course. I'm cutting the yeast down next time. Not giving up. LOL
cinn rolls I made though were great !
Must be the recipe I'll try a different one. I hate that when people put out a recipe that isn't right !
