Around here, I always look forward to fresh green beans. Because of the prep., I usually fix them for family dinners.
My favorites are pole beans and half runners. I grew up with greasy cut shorts, but I don't like the extra beans.

I usually get fresh green beans every week or two, depending on how often I'm shopping. I normally oven roast most of our veggies but prefer steaming fresh green beans and dressing them with a little butter.

I love fresh green beans steamed al dente and made into a cold salad with oil and vinegar and some mint leaves if I have them. They keep in the fridge for a few days and get better by the minute. Yum..now I am hungry.

I love fresh green beans too. I like to steam them, then toss with sauteed garlic and chopped pecans that've been toasted in a little butter. A drizzle of balsamic is nice.

I get them when I can and steam them then toss with olive oil and grated parm and romano cheese and bake them.

I love fresh green beans! Grateful for a neighbor who grows them and keeps me well supplied during the growing season. I like to air fry mine and just snack on them.
@ECBG , I used to get greasy cuts when we had a house in WNC and have never heard of anyone speaking of them since we sold it! I loved them and have been on a search for them for over 30 years! I started to think they must have been called something else. Well, I forgot what I wanted to say about greasy cuts so had to come back
I love them cooked with new potatoes. Summer begins when I have green beans and potatoes.

I don't know the term greasy cuts, what are they? But I do know that fresh green beans cooked with new potatoes and a bacon was one of my favorite sides that my Gram made!

I like them too and do have them often. My fave way to cook them is in my pressure cooker---OMG---they are so tender and stay that pretty green. Takes 2 minutes to cook after the warm up cycle. They are fabulous on a veggie platter that way--not squeaky, if you know what I mean.

I like the skinny Haricot Verts. Growing some of the filet beans in my Aerogarden, but since I can only grow 3 bushes, it takes awhile to get enought for me and DH. I parboil them and then plunge them in some ice water to stop the cooking process. Then, right before dinner I'll saute them in some butter just to get them heated.

Costco (and sometimes Trader Joe's) usually has the best fresh organic green beans...I can't resist. Add a little fresh garlic, lemon, and earth balance....yum! (Our pup likes them too)
