Your ideas on using lots of leftover thin sliced Pastrami

DH has been wantimg me to make him his favorite sandwich which is the rye bread, sauerkraut, pastrami, swiss cheese, thousand island dressing, and grilled. He came home from Costco with a package of lovely looking thin sliced pastrami...........but it's two pounds worth!! (The meat is NOT shaved thin, but nicely thin sliced.)

Aside from freezing some of it, do any of you have any good ideas for using it. It has a sell by date of Nov. 23. TIA for any help. AnneMary
