Being a country girl, big pot of pinto beans (seasoned with smoked ham hocks), some wild greens seasoned with ham hocks, cornbread, green onions from the garden or ramps if they are in season.  I am not a sweets eater but loved making berry cobblers for my brothers when in season or apple pies for them.  Those boys could eat two pies or a whole cake.

@Fiero Woman,

I’ve got pinto beans soaking to cook tomorrow with a chunk of ham.  Will fry a skillet of potatoes with some fresh ramps, and make a pan of cornbread.   Drive on up and join us!   

 

One of my my favorite meal combinations is fried chicken, mashed potatoes (with lumps), milk gravy, and peas.

Grilled chicken quarters, spinach/strawberry/mushroom salad w/balsamic vinagarette, yeast rolls.

@RedTop  I sure wish I could.  A meal made in heaven.  Perfection.  Love me some fried potatoes to go with those beans.

@sol_luna,I LOVE spinach too!  This is an OOH-OAH!  spinach recipe.  It reheats like a dream and can be cut down.  The quiche has no pastery calories and is wonderful!  It also reheats well, Our 5 and 11 yr old grandsons always come in and ask if we are having a "spinach thing"!

 

I did the quiche in my Foods classes and everyone loved it!

 

 

 

Spinach Cheddar Casserole

 

 

3 C Fresh spinach (8 good handfuls) steamed 10 minutes and drained

2 Cans recipe cut tomatoes, drained

1 med -lg onion coarsely chopped

1/4 C Heinz Chili Sauce

1 C cracker crumbs from Ritz crackers (not bread crumbs)

1 tsp salt

1/4 tsp paprika

1/2 lb sharp cheddar cheese, grated

1 C  real bacon bits

 

Heat Oven to 350 degrees

 

Place 1/2 of the steamed spinach in a deep buttered casserole.

 

Spread 1/2 of the following: chili sauce, tomatoes, onions, bacon bits, salt, pepper, cheese, and cracker crumbs.

 

Repeat ADDING BACON BEFORE ENDING IN CRUMBS

 

Bake 25 minutes.  Enjoy!!!

 

 

 

 

Crustless Spinach Quiche

 

Preheat oven to 350 degrees

 

1 Tbsp. Oil

1 lg. onion, chopped

1 pkg chopped, frozen spinach, all water squeezed out

        I put in a colander and press with a spoon.

5 eggs

¾ lbs Muenster cheese, grated

Salt, pepper

 

Preheat oven to 350 degrees

Spray pie plate

Heat oil in skillet over med heat

Add onion cook only until clear

Add spinach, cook only until excess moisture is out

Let cool.

Beat eggs in bowl with fork or whisk.

Add cheese,  and salt, pepper to taste

Stir onion, spinach mixture in.

Pour into pie plate

Bake 40-45 minutes until lightly brown.

Serves 6 adults as a side vegetable.
