Here's the chess pie recipe I use. It's from the Talbott Inn in Bardstown, KY.
Old Time Ky Chess Pie
1 cup granulated sugar
3/4 cup light brown sugar
1 tablespoon cornmeal
5 eggs
1/3 cup heavy cream
1 tablespoon cider vinegar
1 teaspoon vanilla
1/2 cup melted butter or margarine
1 unbaked 9 inch-deep dish pie shell
Preheat oven to 400*
Combine granulated, brown sugar and cornmeal in medium sized bowl.
Beat in eggs...one at a time. Stir in cream, then vinegar and vanilla.
Drizzle in melted butter, beating all the while.
Pour mixture into pie shell.
Bake in preheated 400* oven for 10 minutes. Reduce heat to 325*. Bake 45 more minutes until filling is puffed, brown and just set.
Cool and enjoy!
